Niiyu Honjozo Barrel Sake
Perrier Marche in Nishi-Funabashi Station, where you can drop by on your way home from work, has a lot of (classic type) sake from Chiba Prefecture.
So, I selected some for my wife and father-in-law, hoping they would like them.
The result was... "Delicious!
The aroma is very oaky (cedar?). The mouthfeel is slightly sweet,
Slightly sweet on the palate, with a robust umami flavor in the mid-palate,
The aftertaste is dry and slightly lingering.
It is a classic, heavy cask sake.

→ Not to my taste, but this is a delicious bottle.

A bottle I bought in line at a brewery festival at Nabeten, a sake brewery in Kanzaki, Chiba Prefecture, in early spring. I unearthed it from the refrigerator and opened the bottle.
The longer the sake spell, the better it looks, but there was no way the festival's highlight could be bad, and it was easy to drink with a grape-like sweetness coming after.

There are only a few remaining breweries that have not received it. The remaining sake is from Chiba 🥰.
As expected, I couldn't read the brewer's name, Nabedana (鍋店)😅 without asking the store owner.

It has a subtle ginjo aroma and is a clear, dry sake with a delicious rice flavor on the palate 😋.

Texture is smooth when you include it.
Slightly fresh and spicy.
The taste of rice is refreshing.

I couldn't go to the brewery festival, but I was able to get this bottle at a roadside station.
It has a refreshing taste, a little foamy, sweet and umami aftertaste, and not too spicy.
I like nama sake, so it was perfect for me!

I recently followed someone on Instagram who was posting a lot of technical information about sake, and I found him at this booth.
This is the booth of Niiyu from Chiba Prefecture.
Niiyu is mostly rice.
In Kansai, I think the steadfast brand is more famous.
Some of the sake were already sold out.
◉u no sake
Yamadanishiki Yamahai Junmai, a type of pure rice with strong acidity and amino acidity. It is made to be as good as eel sauce and burnt eel. The brewery is located on the side of Mt. Narita and there are many eel restaurants on the approach to the mountain.
◉Niyuu Honjozo Dry
A mildly umami taste. The acidity gives it a refreshing aftertaste.
◉Junmai-shu (Junmai-shu)
A very mildly umami sake, with a nice, smooth taste that I like. This wine was supposed to be the winner of the International Wine Challenge, but they mistakenly gave the prize to this one.
◉Niyo Junmai Ginjo
This is another sake that has a very assertive yet beautiful umami and acidity.
◉Junmai Daiginjo
Sweet, fruity and delicious. Similar to Fudo... I was surprised to hear that this sake is a bit unwritten.
He said something like it won't be here next year.
At a certain Aeon Liquor in Kanagawa. The aroma was very nice and it went down smoothly. It was delicious. I should have bought the original sake that needs to be refrigerated as well...! I have to go buy it...!
