@sakebar Fukuzo This is the last sake I drank at Fukuzo 🍶. For those of you who think "how much have you had to drink? I think so too😅. The first aroma is sweet with classic acidity. It has a full-bodied sweet flavor with a hint of acidity on the palate. It's also a great costumed honjozo that doesn't make you feel like it's been soaked in alcohol 😋. It was delicious 🍶✨. I'm here today for my department's farewell party! We had a beer, 2 mega highballs, and 4 bottles of warm water, and when they were all nicely tinted, we threw in some sake 🍶. I drank it hot, and it had a nice, mild taste of rice with a smooth texture and a nice smooth taste down my throat! It is not too assertive, but in a good way, it is not like a hot sake, and it also promotes the sake and the meal 👍. It has a rich taste with a sense of maturity. It has the richness that is typical of pure rice, and has a relatively classic taste.

From the Tone Nishiki brewery, the second in the dancing series, "Dancer". Low-alcoholic sake with a high koji ratio. Chilled. Aromatic or rather sweet aroma with a somewhat mucky atmosphere that reaches deep into the head. It has a complex flavor with a mild, firm sweetness and a grain-like hardness. The acidity gives a clear flavor profile, and there is enough umami to give a satisfying but not lingering sharpness. This may be a flavor I have never tasted before.

Junmai Daiginjo-shu bought at Chapinstow, London. It is a raw sake. It has a dry taste. Unpatseurised sake. Unpatseurised sake. Dry taste. Weak smell and aroma, you can feel the taste if alcohol. 3.5/5 ✖️ don't buy again: it's a welcome change from the softer Junmai Daiginjo we usually have, but it isn't my favourite.

Fukushima again today. And raw sake! Huh? No tingling sensation? And it's not so much sweet as it is...is it salty? Salty? It's a new sensation. (I'm sure I'm mistaken.) Last year? (I'm sure I'm mistaken.) It's a different image from the Aizu Nakasyo I drank last year. This is only the second time I've tasted it (correction: it was the third time 💦), so I guess I don't understand it well. Sake is so deep.

The fourth bottle brought in is Aizu Chusho. This one is also from the inventory of a junior colleague I mentioned earlier. It has the unique flavor and richness of light nigori. It has a moist finish, which gives it a gentle feeling. It is a distinctly different sake from the others we have brought in. I like this kind of sake! This kind of sake is also good! At the banquets I organize at work, I give an allowance to those who bring in their own sake. A bottle I want other colleagues to try. A bottle I want to drink with them. I want to cherish that thought and the spirit of self and others co-prosperity. Thank you for your hospitality!

There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. When paired with the koji-marinated squid (🦑), it takes the edge off and cozies up to you. The power of koji is amazing 😆. Looks like a new brand to be born in spring 2023. ☆☆☆☆☆ It has sourness and a little bit of miscellaneous taste or bitterness, then comes the sweetness or umami of nigori. It has a bitter, youthful taste that goes well with spring wild vegetables. The sweetness that comes afterwards is also youthful.

My father bought it for me as a souvenir from his trip to Aomori. The nose has a faintly acidic aroma. In the mouth, there was a delicate acidity from the sake yeast and a calm, gentle sweetness and richness. It was a crisp sake, typical of Sakuta's special pure sake. It was delicious, but it was not so good when it was warmed up 🤔.

This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

Next was a sake I'd never seen before, so here it is. As soon as you take a sip, a very unique habit spreads! What is this? What a shocking taste! Looking at the label carefully, I found a hint of plum flavor? If it's the astringent bitter taste of plum, I'm convinced: 🙂↕️ I don't think I'll ever drink it again😅.
