Houraisen is a clean ginjo-shu in general, and it is surprising that the aroma does not collapse even if it is left at room temperature. It is almost impossible for the sweetness to become rich or for it to have a Maillard-type burnt smell. It is a tough sake with a sweet, cappuccino-like quality. The last time I was in Nagoya, they had it with Jyushiyo 🐩I'm curious if that's true! Surprisingly spicy...! There's a slight sweetness, but it's clear..! I like Taxi Driver's! I'm talking that it's not that spicy, but it's there more than I expected! It's not too fruity, but the sweetness counteracts it, but I think it's spicy at the end!

Purchased at the Chiba Prefecture Antenna Shop, which was open for a limited time at Hankyu Umeda Station. I had drunk Seisen from the same brewery in the past and was not fond of hiyaoroshi, but I was impressed with it. The first aroma was already gorgeous. It is sweet and a little tangy on the palate. The second half is a little spicy. It was more delicious than I had imagined. Overall, I'd say it's fruity and dry.

The price is too good to be true, so it is understandable that it is sold out. Takeoka Junmai Ginjo Gohyakumangoku This one was tasted at room temperature, not chilled. I've heard that if you chill it too much, it becomes too crisp and blurred in flavor. The acidity is refreshing and not too dry. Takeoka Junmai Ginjo Yamadanishiki The nose is sweet from the first whiff. I prefer Sou-no-Mai or Omachi, which are more sweet and tasty. Takeoka Junmai Daiginjo Omachi Fruity, rich, sweet and delicious. I like this one, but it's not my favorite type. This is my favorite type, but it is a bit on the pricey side. I hear there are no places to buy it in the Kansai region. It is only available at product exhibitions, product centers, and antenna stores.

Sakushu Musashi Kenkou Gekkou Gekkou Gekkou Ultimate Daikarakuchi Genshu This is a local sake from Mimasaka in northeastern Okayama Prefecture, the birthplace of Musashi Miyamoto! As the name implies, it's very dry 😆. Sake degree +28 or higher, this is no joke! It is a very assertive sake, so it goes perfectly with a local dish of Okayama, "boiled yellow chives", which is a habitual dish of Okayama 😋. Onra Yamadanishiki Junmai It seems to be named after an ancient demon from the Kibi region in the southern part of Okayama Prefecture! Kokuwaku 😱. 80% polished Yamadanishiki produced in Kume Minami-cho, Okayama Prefecture. Dry taste Grain taste Slightly old sake aroma Personally, I didn't like it 🥲. Sanzen Yamahai Junmai Omachi Nama-nara Sake This is a sake from Kurashiki. Made with Omachi, the pride of Okayama Prefecture's sake rice. Not fruity, but umami type. It has a classical grain-like taste. The acidity is unique to the Yamahai brewing process. Thick and rich. When we went to Kurashiki, she rented a kimono and we went for a walk 👘.

The other day, my dad and I went to my parents' house for a long time. We started with beer 🍺, then I brought the rest of the "True White" that I had opened the other day, and my dad brought out some sake that had been laying around for a while, so we had a drink here 🍶. Kansai Junmai Sake. I often drink "Kansai Kaisen" hot, but this is my first time to drink Junmai Sake 🤔. Clean and beautiful rice aroma, rounded flavor and refreshingly pleasant aftertaste, probably due to the cellaring. The taste is different from Katayama's other brand "Gassa Junmai Ginjo", but it's hard to tell how much of it is due to the aging process 💦. However, I have a feeling it would make a beautiful hot sake when heated. By the way, when I gave "True White" to my father, he said it was too sweet, but when my mother drank it, she said it was delicious 😁. The fourth picture is from a trip to Atsuta Jingu Shrine in Nagoya, where I lived for two years after graduating from high school, to purify my car and eat Hitsumabushi. [It was my first time to eat at "Unagi Owada" because "Atsuta Horaiken" was closed, but the sauce was much lighter than this one.

Sake received at the Sake World Summit. This sake is brewed with Ginbukiyo sake produced in Shiga Prefecture. The acidity and umami of the sake are well intertwined with each other. It was a delicious sake. It is perfect as an in-between-dinner drink. My wine-loving friend who accompanied me also accepted the taste of this sake made from the sake's "nama-hashiroshi" (sake brewed from the same yeast as the original yeast).

Purchased 👀 at Sazanami Sake Shop in front of the station during a day trip to Hikone. Beautiful, corner space and friendly staff. It was a nice store 😙. Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga. It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋. Paired with sweet ayu fish from Lake Biwa, it was delicious. ❤️ It is indeed a sake from Shiga, a rice-producing region 😇
