I drank some of the raw sake in March and it was delicious.
I also bought Hiyayogoshi ‼︎
I don't know how to describe it because I don't have the vocabulary, but it's just delicious 😋.
It has a light taste and goes down your throat like water.
When it warms up a bit, you can taste the umami, sourness and bitterness, but it's not unpleasant 😊.
It's not unpleasant at all 😊.

Sweet aroma, soft attack. The taste is clean and delicious. Light on the palate, it goes down smoothly and lingers in the throat.
Reminds me of the Nekoma ski resort I went to about 40 years ago.

Sake made with locally grown sake rice Yumeko and a yeast that produces more malic acid.
The aroma is light and gorgeous. It starts with a light sweetness and a mild acidity that fits well on the tongue, followed by an umami taste that is well-balanced and does not betray the image of the mouthfeel.
It is appropriate to call it a wine made from rice.
It can be enjoyed by cat lovers and non-cat lovers alike.
