It has a light sweetness, followed by a slight sourness.
The aftertaste is a little alcoholic.
Polishing ratio 70%, Sake degree +4, 13% alc.
The overall taste is light.
The aroma is surprisingly pudding-like!
However, it is not so sweet and the sourness comes quickly, so it is less pudding-like, but this is the first Junmai sake with a pudding-like, egg-like flavor, which is good.
The back view of the cat on the label is also a bit melancholy and cute.

The aroma, slightly pungent. A bit grassy when you drink it. A little grassy when you drink it. But the subtle saltiness, bitterness, cleanness, and spiciness are well balanced and nice. When paired with the pickled sea bream, it's refreshing ✨ and easy to drink without any resistance. But it might be a little less interesting 😅 If you pair it with marinated herring and dill, it's more interesting with more dill, but the sake might be less assertive. It might be a bit too much. Reset with fries.

The first taste is not very light, but the mild umami comes in.
After the aroma of rice flavor, there is a slight sweetness, followed by a good amount of acidity and astringency.

Today I had some Tanzawa-yama and Rinpou that had been sitting in the fridge. This is delicious. I really like the taste. I should have bought a bottle. I don't think we can find Yamahai from Kawanishi very often.
