A visit to the brewery. The brewery is located in the landscape protection zone of the old Izumo Highway connecting Izumo with Himeji. The storefront is tasteful and wonderful.
We visited the directly managed store across the street from the brewery. We listened to various explanations about the sake. The brewery plans to brew all of its sake from now on using Omachi and Bodaihashiro brewing.
When we asked him about sake recommendations, he recommended the Bodai-Hashiroshi brewed sake. We felt their enthusiasm as they are going to brew sake with Omachi and Bodai Hashiro.
The aroma is gentle and nutty, and the umami comes to the forefront. Sake with delicious rice flavor.

To Hiroshima to visit an old friend
On the way back to Hiroshima, we took a side trip and visited a sake brewery street in Saijo. However, because it was the Bon Festival, nearly half of the breweries were closed. Kamerei, which I was looking for, was also closed. As we were about to leave, a local sake shop was opening on the outskirts of Saijo Sake Brewery Street. When I entered the store, I found that it was full of locally brewed sake. I immediately asked the shopkeeper if he had any recommendations for Kamerei sake, and he recommended this sake. I was told that this sake is not sold outside of the city and is only brewed for sale at local liquor stores, so I immediately purchased it.
The aroma was strong and nutty, with a hint of pear, and the color was crystal with a slight yellow tinge. The first sip reveals a refreshing acidity and sweetness. The robust flavor is impressive. It was a good decision to buy it. It would go well with dried horse mackerel.

Visiting Hiroshima to see an old friend, I stopped by a roadside station in Higashi-Hiroshima on my way home. While I was wondering what kind of sake I was looking for in front of the sake fridge, a store owner asked me what kind of sake I was looking for. He recommended Otafuku. He recommended Otafuku, which is produced in small quantities and not available outside of the prefecture. My expectations were high 😃.
The aroma is mildly nutty and citrusy. The first sip has a refreshing acidity and a ginjo aroma that wafts through the nose, followed immediately by the umami of the rice and a great sharpness. I think it goes well with white fish sashimi.

We had no choice but to go to a convenience store to get some sake, and we found a one-cup Ozeki Daiginjo on sale, so we tried it for the first time!
The aroma was not gorgeous, but the taste was mild and dry. The aroma is not spectacular, but it is mild, clean and dry. There is not much sweetness, and the acidity and astringency give it a refreshing and crisp finish.
