At the tasting. Junmai Daiginjo fire-aged Gohyakumangoku. It is mellow, sweet, and beautiful. It has the same label as the affordable unfiltered raw sake sold at Yamaya, but this one was more expensive at 3,300 yen.

I also bought this at Yamaya. The aroma is like a pineapple. It has a mild sweetness and a juicy flavor. This is one of my personal favorites from DHC Sake Brewery. It's been a while since I drank their sake, but it's still delicious. There is a big change in the taste after opening. The pungent taste became more prominent. The pineapple aroma also disappeared. The gradation of the bottle is beautiful.

The rice used is Senbonishiki from Kumano in Hiroshima Prefecture. This brand is probably the first. To be honest, I didn't know about it. The person of the shop said "It comes in after two years". At home. This is the second one in the Hokkaido series. Kokushi Muso is a metaphor for being so good that no two people under the sun are alike. A drinking friend of mine wanted to drink a bottle of Takezuru by Toshi Ishikawa, who has moved to Tsuki no I. So I agreed to accompany him. We had it heated. The first aroma is like a matured Shaoxing sake. The first sip had a matured Shaoxing sake-like aroma, and the second had a mildly sweet taste with a Shaoxing sake-like acidity and umami. The sweetness is still there, but it's the kind of fully fermented sake that you can drink while eating snacks. It was delicious 🍶✨.

It is said to be an irregular sake. The toji-san overfilled it with 4-stage rice or something😅. The "Raku" on the label represents the over-filled rice, and the blue color represents the pale face of the toji-san. Gutsy, but quite sweet and sour. It is much sweeter than other Raku no sei I've had, but I also feel its character. The rice is from the terraced rice fields of Hida. I can't seem to name the rice, but I wonder if it is Hidahomare or some other rice that is only available in Gifu.
