Bought this sake while at the Gunma Marathon! It's dark and full of umami! The owner is right, it goes well with warmed sake. It has just the right amount of bitterness and acidity.

The rice used is Gohyakumangoku and Nihonbare. If I had to describe it in one word, I would say it's "Omnivorous Japanese Sake Partridge". It has an old-fashioned flavor and an aged feeling like a hiyaoroshi. Spicy and sweet in equal measure, with a long finish. It's a sake that should be served warm. By the way, it's "Hiyaoroshi", but it's shipped all year round.

I learned of the existence of this sake through non non's post. It was a little difficult to go there because you can only buy it at the direct sales place which is open only on weekdays.... It was a nice homey sake brewery 😊. It was limited to 100 bottles and they were the last 3 bottles. It's shwashy, sweet and sour. It may be a daiginjo, but it doesn't taste like yamahai and is easy to drink.

I had it before and liked it so much I got it again 😆. BBQ, corn, edamame, cucumbers... perfect for summer 😁. I like to drink it with soda since it is 20 degrees. And if you mix it with Wilson lemon, it becomes refreshing and easy to drink ✨. It came in handy in the summer when I wanted to drink very much ☺️

Purchased because of the 60% milled rice ratio and 20 alcohol by volume. I wanted to drink it on the rocks on the day the rainy season ended, so I opened the bottle. ☀️ I paired it with frozen Genghis Khan that I brought back from Tono. It's well separated, so I shook it lightly before putting it in ice 🧊. It's less lactic than I thought it would be, and it's very spicy and thick, but it's cold and refreshing and delicious 🤤. I like this kind of sketchy in a good way. My brain feels good🤩. Definitely this for Genghis Khan 😭

First Crossed Rising Sun I bought it at a local liquor store. It is a refreshing sake, but you can feel the sweetness of the rice. It is a draft sake, but if you warm it up to about 35℃, it quickly changes to a softer atmosphere. Personally, I think I like it better when it is warmed up. A small wine glass goes well with it when served cold.

Next was a Hiroshima sake called HANAHATO. It is a junmai ginjo made from 100% Senbon-Nishiki. The label is a rabbit, the Chinese zodiac sign for the New Year. Actually, this and the next brand were given to me by another business partner. We met next to each other at a meeting, drank together at the dinner table, talked about sake, and had a great time. We are also regular customers of Gin no Sake Kibune, and we receive items purchased from there every time we visit. m(_ _)m The taste is soft and sweet. The taste is soft sweetness with a hint of umami on top. It is a beautiful tasting food sake. Everyone drank it with smiling faces. It was delicious! (^O^)

Tonight, our first series of impactful jackets here 💁. It's Taxi Driver🚕🚕🚕🚕. It was shipped from the brewery in April this year, but what a H30BY (R0BY) and it's a 5 year aged sake 😆. The aroma of old sake, which also smells like Shaoxing wine, is in full swing from the moment the bottle is opened 🤣. It was served cold, but it is easy to drink because of its acidity. It would be good to drink it warmed up in the fall. ☺️ I wonder if it would go well with Chinese food since it has a Shaoxing sake-like flavor, and I'm going to research how to drink it based on other sakewa reviewers 💪. But it's a very intoxicating drink so I'll stop after one cup 😓.

First drink. Weak fruity feeling that I didn't imagine from the label that has impact. But it is also full. There is a miscellaneous taste (my personal feeling) like the Yamahai brewing style with low rice polishing, but it is a moderate level, so I feel it is unique. It has just the right amount of sweetness to satisfy my preference for sweetness. I enjoyed it with a plate of delicious sashimi (´ω).

Not much aroma...old-fashioned mellow umami-kuchi...it's a food sake 🍶 like the local Mukho Masamune or Teisho🌲...it's a sake that is only possible with snacks 🍶...the bitter aftertaste may bother you a little? I noticed after I bought it that it was manufactured in 2017.3 and shipped in 2020.9. ????? The first day I opened the bottle, I thought it had an unusual taste. The flavor and acidity are amplified. I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).
