Two years ago 🚗 I visited Minami Haga, a roadside station near a sake brewery, and checked in 😅I bought a mini bottle of Banshu Ichiken and a bottle of Old Pine Sake Brewery's Sansho as a souvenir.
Sanyo Bai Sake Brewery and Old Pine Sake Brewery are almost across the street from each other, about a minute walk away, so I recommend you visit both of them 😊.
The Sansho is a regional brand 😃👆👆 Like the Banshu Ikken, the Sansho Junmai Ginjo is also made with Hyogo Yume Nishiki sake rice. Maybe it would have been better to warm it up 🧐.

I have recently learned that there are two other sake breweries in Japan, one in Itami and the other in Oita 😅I have only had one type of sake from them, so I would like to try the fruity raw sake next time 😋.

Sourness and sweetness, both present. It leaves an aftertaste, but it is not unpleasant. It was good, moderately rich.
What is kijoshu? I searched for it and found out that it is made with sake, not water. I had no idea.

Currently, there are two remaining sake breweries in the city, Sanyo Sake Brewery and Old Pine Brewery, but until 40 years ago, there was another brewery, Honke Monzenya, which brewed and sold a type of sake called sansho (three laughs).
The building of the Honke Monzenya still remains, but in order to make the most of the historical landscape where sake breweries line up from Sanyo Bai to Laematsu and Honke Monzenya,
The Yamazaki Central City Area Revitalization Committee (Good Town Project) was formed, and over a period of two years, "Sansho" was revived!
There is a café called "Sansho" on the former site.
Let's start with the old pine tree.
It's been a while since I've posted.
When I stopped by my hometown, there was a fall festival. Old Pine nearby was selling sake by the cup and I was sucked into the store.
I was attracted by the "Hiyoroshi" (limited hiyaoroshi) and bought it! I should have bought several bottles.
I liked it so much that I wished I had bought a few bottles (which I couldn't), and I sipped it after dinner and finally finished it 🍶.
I'm not sure if this is the right kind of check-in 😅, but here is the check-in from my first visit to the Oldest Pine Sake Brewery 3 years ago😃There is a park near the brewery with beautiful autumn leaves 🍁The apple juice I bought at that time was delicious 😘It was a liqueur mixed with sake and almost an adult's juice 😁💦. It was almost like an adult juice 😁💦.

Mellow aroma. The palate is full and fluffy, and the flavor is added at the end of the performance without any change. It is just like swinging a baton for the last time.
The aroma is alcoholic, but the palate is full and expansive, and it finishes crisp while remaining expansive on the tongue.
It is exactly like a harsh but gentle boss.
At the tasting corner of the JR Itami Station Tourist Information Center. It seemed to be a blended sake, so even the tasting size was quite satisfying.

The mouthfeel is light and smooth.

It goes down the throat and through the nose at the same time.
The taste is refreshing and clean.
It seems to go well with Japanese food.

It was purchased at a brewery located near (about 30 meters?) from Sanyo Sakebai of Banshu Issen. Banshu Ikkyo Sanyo Sake Brewery is located near the Sanyo Sake Brewery.
Brewed with distilled water from the Ibo River.
This is the first time I've tasted distilled water instead of spring water or well water!

We had a paid tasting at the Old Pine Sake Brewery.
I asked for two glasses and was surprised at the amount of sake.
The paper cup was filled to the brim. It was amazing!
150 ml per cup.
It was clearly written at the entrance...
I decided to drink it slowly (sweat).
It has a strong umami flavor.
This is what sake is supposed to be like.
It also has a nice lingering aftertaste.
We enjoyed it with a cool breeze!

It is a true sake that shows the hard work of our predecessors in the sake making process 😉.
We will pair it with sukiyaki (garlic 🧄mashimashi) made with white miso for a seasonal change of health. ....it was delicious 😋🍶.
