Yesterday, I went to my favorite izakaya "我" ♡♡♡. I drank a variety of drinks in the all-you-can-drink 1 hour 1500 yen (*^^*) It was crowded, so I couldn't order at a high pitch, so I could only drink 9 kinds out of the 20 or so available...(-_-...) The 6th drink was "Miho". Oroku" and "Gassan" are the most famous sake from Shimane, so I haven't had many of the others. It has a strong sense of rice, but it's not mellow or fruity. We ordered at Benkei no weibasho, an izakaya near Niigata Station. This restaurant is operated by a local conveyor-belt sushi chain, and we were informed that their seafood dishes are sure to be good, so we made a reservation and visited. I was curious about this sake at Ponshukan, where I had wandered around during lunch. Niigata is known for its dry sake, but this one is quite fruity. It is not too sweet, so it goes well with sashimi. I mean, too much throat groyne!

The rice used is Gohyakumangoku and Nihonbare. If I had to describe it in one word, I would say it's "Omnivorous Japanese Sake Partridge". It has an old-fashioned flavor and an aged feeling like a hiyaoroshi. Spicy and sweet in equal measure, with a long finish. It's a sake that should be served warm. By the way, it's "Hiyaoroshi", but it's shipped all year round.

I learned of the existence of this sake through non non's post. It was a little difficult to go there because you can only buy it at the direct sales place which is open only on weekdays.... It was a nice homey sake brewery 😊. It was limited to 100 bottles and they were the last 3 bottles. It's shwashy, sweet and sour. It may be a daiginjo, but it doesn't taste like yamahai and is easy to drink.

Koshino-Hachiho Junmai Sake This is also a brand new to me! It is a light and dry sake with the main flavor of rice. It is a typical food sake that does not interfere with the taste of the meal.

Niigata Sake no Jin OSAKA⑰ The booth of [Koshinohatoyo]. I had drunk it before, but at the time, I only had the impression that it was labeled with a family crest of Rokubun Sen. The sake was -5 on the sake meter. Originally, they sold a dry sake and a sweet sake, but the sweet sake was said to be too sweet, so they made this sake. It has a moderate sweetness, a complex bitterness in the aftertaste, and a sharp convergence from a slightly nutty taste. Sake: Sake with a Sake meter of -10. Sake meter rating -10, not sticky sweet, but clear sweet. It doesn't feel that sweet to me, but I guess that's just a matter of the temperature range. Koshinohatoyo Junmai Genshu. The umami taste is felt and then there is a bitter bitterness, and from the aroma that passes through the nose, the richness of the rice flavor. It has the sense of sake at the beginning. The image of Rokubun Sen has changed to the image of Kanji characters like "pine blossom".

Niigata Sake no Jin OSAKA⑯ Echigo Sake Brewery of the Ozeki Group is a little-known sake brewery. I saw this one at a store I sometimes visit and have been curious about it for a long time. I tried Kanenaka, a sake made by Nakajimaya in Shunan City, Yamaguchi Prefecture. The label is very cool. The manager recommended this sake, and it won a prize at a competition in Paris, so I opened the bottle with high expectations. The first saké was cold and the first saké was, "Hmmm? It has a strong unique flavor... It's a bit peculiar because it's a sake brewed from a traditional sake brewery... It's not a good match for me... I think it would be better to warm it up 🤔. I opened it for 2 days and drank it.... It has some kind of sweetness, and it's indescribably rich and delicious 😳. This is what I mean when I say that the taste opens up. It's not for everyone by any means, but I thought it was a good sake with a sense of the creator's commitment. Thank you for the treat 🙏.
