Rice used is Oarai-grown Chiyonishiki It is more rough than fresh. However, it is not rough at all. It has a refreshing taste, and the umami of the rice spreads slowly. I've had many Tsuki no I's with this kind of atmosphere! I think it will probably become milder and more flavorful with aging, but I like it better as it is because it has its own personality.

6/10 Domaine Akishika. It is said to be a sake made from Omachi produced in a rice field called Kamimura-Omachi. And they say it is aged, so the price is quite expensive. It had a robust flavor and mellow taste. The bitterness that comes in the latter half of the sake was also enjoyable. I had no idea that such a sake was available here.

Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.

I bought this simple labeled sake because I was curious. When warmed up, it has a robust lactic acid aroma, a gentle sweetness, and a full, rich umami. It has a nice lingering aftertaste that seems to soak in. At room temperature, it has a slightly sweet and sour rice aroma with a banana-like flavor. I bought it last year as a souvenir from Utsunomiya. It's been a while since I've had "out of the gate", but my taste buds have changed since the last time I had it, so I'm looking forward to it! When you open the bottle and pour it, it smells like citrus fruits and lychee. It is tasteless on the palate, but gradually the richness and mellowness of the rice comes out. Overall, the shades of gray are exquisite, and the taste is quite interesting! In fact, the first sake I ever drank in my life was "Monkai Fude. I was actually the first person in my life to drink sake, and that drink at Kinugawa Onsen has led me to the present day.
