This one was brewed by Nakajima Sake Brewery, a 100 stone sake brewery in Okunoto, using Azuma Sake Brewery's facilities in Komatsu, which is in the midst of the excitement of the Shinkansen bullet train opening. Nakajima's gentle umami and Azuma's sharpness. It's a good taste. It's a nice taste.

The same mild aroma as the first sip, soft rice flavor and moderate sweetness spreads with a little acidity, and finishes quickly with a hint of bitterness and a little alcohol spiciness. Overall, it is refreshing and easy to drink. It is good for accompanying a meal, but it may be too smooth as a stand-alone sake. The taste may have changed since the one I bought from a brewery in Ehime this time last year came out of the fridge. It went well with spicy grilled minos and Umaibo shrimp mayonnaise flavor.

There seems to be a French restaurant attached to the brewery! I found out that the regular junmai ginjo has a more classic label. This one seems to be a modern type named "Grand", so I wonder if they are making a modern label? This sake won the Platinum Award at the 2017 KURAMASTER Sake Competition Polishing ratio 55% Yamadanishiki from Ibaraki 15.3% Sake degree +1 3000 yen Fruity and sweet but a little strange? Maybe the taste of Senhime is still in the boar's mouth😅. I forgot to take a picture, so I borrowed Nemuchi's picture.

Slightly melon-like finish The same subdued, fruity aroma as the first sip, with a hint of vanilla and a hint of azuki beans, soft sweetness and umami of rice spreading with a refreshing acidity, and finishing gently with a hint of bitterness and a slight spiciness from the alcohol. Elegant and well-balanced, it is easy to pair with meals, and is also delicious on its own. My friend's nickname is Tama-chan and his wife's maiden name is Izumi, so he chose this sake as a pun. It went well with Italian-style grilled salmon with foil, stewed sweet potato, chilled tofu, and squid cod roe.
