Comparison of Asahi Hou
I felt that the fire-roasted one tasted gentler.

Asahi Hou is also a brand new to me!
This day was all about firsts!
We compared the unfiltered nama sake and the hi-ire sake.
I found the hi-ire one to be gentler and easier to drink.

Notes (see online information)
Junmai Ginjo Shiboritate is brewed by Yohei Hamamura, the 7th generation brewer, with local "Nakate Shin Senbon" from Hiroshima Prefecture and our own yeast KB-1.
It has a fruity ginjo aroma, a smooth mouthfeel, and a fresh, rounded flavor of rice that spreads in the mouth. It has a good balance of acidity and sweetness.
A product typical of Hiroshima.
Ingredients : rice, rice malt
Sake strength: 16-17%.

Oh no.
That was the only word that came out of my mouth.
I was overwhelmed.

Rich and delicious sake! Like doburoku!

Ripe!
Just no unpleasant acidity at all!
Nectar
Just nectar!
Too good!
The lukewarm temperature has removed all the unpleasant tastes, and I'm ecstatic!
The 10th Osaka Jizake Tenma Daijukai 2024②.
Kiyotsuru's booth.
This is another Osaka sake I've never had. Too many I've never had even though I'm a local 😅.
I tasted some while asking bouken-san about various things about Kiyotsuru.
I should learn from him 💦.
Junmai Hiyoroshi
I heard other people talking about it, and they said it was hiyaoroshi, but it had been aged for 2 to 3 years. It had a solid richness, and shouldn't it be labeled "matured sake" and sold as such?
Certainly it is strange to have hiyaoroshi at this time of the year... Bouken-san said that hiyaoroshi is sold all year round at his brewery.
Junmai Ginjo One Hundred and Sixty-Eight Year Old Sake.
The pop-up says "Hana-ya" and bouken-san explained that the number of years increases with each year... It was classical, and the aftertaste was a little sharp and spicy...
At this brewery, a boy of junior high school age was pouring sake into an inokuchi (cup) for tasting.
Is he the heir to the brewery? The next brewer? 🤔

Tenma Taishukai 2024 ③.
I got the order wrong💦.
The one I was drinking before So no Sato was Kiyotsuru😅.
I've been to the brewery to buy sake at the end of the year before last, but it was quite far from the station and hard after a night shift 🤣.
Because it's only open on weekdays 🙄.
As Shinjo-san has posted in the past, is it a child of the brewery? There was a person who looked like the brewery owner and a boy who looked like he was in junior high school serving customers.
I drank
Junmai Hiyoroshi
It was aged for 3 years. It was quite colored and had a strong sense of maturity. Nemuchi-san said, "This is not hiyaoroshi! Nemuchi-san said 🤣.
The brewery sells hiyaoroshi and arabashiri all year round, and depending on when you buy it, it may be fresh or matured 🤔.
Junmai Ginjo, a sake that has been in business for 168 years!
The number changes every year because the number of years since the establishment of the company is used as the name of the sake. I've had the 163 year old and the 166 year old in the past. It's supposed to be fruity, but every time I drink it, I don't feel much fruity...
This time I felt a bit of maturity.

Light, a little rice taste, light sake taste, not too strong, 3 stars
The second cooler is Taxi Driver. Compared to the mouthfeel of Akabu, the sake-like quality is grueling.

I found a cab driver who had missed a drink at the Hanshin Department Store event hall, so I decided to taste it immediately.
The wine had a slight astringency and roughness in the mouth, but it was juicy with a refreshing acidity that spread across the tongue.
Cab Driver told me that although the label on the front is the same, there are 9 different varieties, each with different yeast, rice polishing ratio, and brewing tanks, and that I could enjoy different flavors if I followed up every time I drank it. I was told by the brewery staff (?) that I can enjoy different flavors if I try to follow each bottle.
It had a soft, crisp taste on the palate and was clear and dry.
Yamadanishiki Polishing ratio 60
Alcohol content 15%.

It's been a while since I've had a sake that hits me like a ton of bricks.
It has a nice aroma, full of the feeling of a traditional sake with a matured taste 🍶‼️
It's definitely better at higher temperatures👍
But it wasn't my mood today 😄.
Gotemba's local sake
It has a smooth taste and a refreshing aftertaste.

Kinmyo Junmai
60% 15-16% 720ml 1309 yen
Purchased at a roadside station in Shizuoka. I don't know this brand. The label gives off an old-fashioned impression.
Pouring it into a glass, the color is slightly tinted.
The first sip.
What?
It's here....
From the first sip, there is a sweetness like caramel and custard, and a depth like maturity.
The aftertaste is nicely balanced with a hint of acidity and spiciness.
There are no trendy elements, but I like this one a lot.
I like it a lot.
It tastes even better when heated up.
The label is classic, but I don't think it's an orthodox sake. But it's not quirky, it's original.
It is brewed by a small number of people at a brewery in Gotemba City. The brewery has a small number of brewers in Gotemba City, and they do not make any regular products.
Rating 4.3 (out of 5.0) 20220905
I uploaded the ranking from last May to August on my profile. It's hard to catch up,...
Fruity and floral as the name suggests.
It is not too sweet and easy to drink.
Takaraiya has a lot of sober sakes, so when introducing them to newcomers, this area seems to be better received.

This is a bottle I bought on a trip to Kyushu along with a bottle of sansho. Buying a bottle of sake on a trip is fun because it seems to test the overall strength of my sake experience. This time it seemed to be a winner. And I have a feeling that I hit the jackpot. I'll check again tomorrow.

Yamada Nishiki and Oita Mitsui.
The flamboyance of the perimeter.
Spiciness swells from the mid-palate and is released in a refreshing manner.
Leaving the new sake festival, we went to the second restaurant.
The second party was at a soba restaurant on the restaurant floor of Amu Plaza Kumamoto, adjacent to the station.
This soba restaurant has a great selection of sake 😁.
The price is... no way 🤣.
The second drink was Shashaemon
I had this sake at this restaurant before, but I couldn't remember what it tasted like, so I ordered it.
The moment I put it in my mouth, the gorgeous aroma spreads and sweetness, sourness, umami, and spiciness all come at once 😳.
This feeling is like no other 😁.
You can enjoy this on its own or as a food sake 🥰.

にどね
It's water with a hint of liquor. ...... It's delicious!
The aftertaste is really sake!
