We returned to the Yomiuri Shimbun booth again.
We tasted "Yamato Kokoro" which we hadn't tasted yet.
I have seen Takeda's "Ehime Ichie" before, but this was my first time to taste "Nihon Kokoro".
The brewing water is from the "Uchinuki" spring in the Ishizuchi mountain range.
Ehimeichikai" is a new brand launched by Shozo Takeda, the head brewer of the brewery.
Nihon Shin Michi Junmai Daiginjo
A well-balanced, high quality sake with sweetness, umami, and bitterness. It has a little bit of a tang. I think it would have been better if it was chilled.
The label is a chic black and white horizontal stripe, I don't know what kind of sake it is๐ .

Next up was another unfiltered raw sakeโจ.
Nishibori had never had one before so we decided to order it ๐ก.
It has a strong rice sweetness, and this one is also sweet like Wasanbon, leaving a bit of a lingering taste on the tongue.
Upon closer inspection, it was a Tochigi sake ๐.
It was like we were all drinking while saying that Tochigi sake is of a high level after all. โคด๏ธ

I personally like these labels.
Many people who are not familiar with "Nishibori" may know the brand name of "Monsai Huzue".
This is my first time drinking Nishibori, and it is delicious.
It is a sake with a good flavor and sharpness.
Short-stalked boat" is the parent of Yamada-Nishiki, a precious rice that has been revived in the modern age. I have not yet fully understood the characteristics of the taste, but I have the impression that it is lighter than Yamada.
There is not much information about Nishibori on the Internet, so it may be that only a small amount is produced.

I was really curious about this one that some people mentioned in the March Kansai Off-line Meeting report (โผ๏ธ).
I was looking for a liquor store that sold this sake, and I found one in the city of Utsunomiya ๐Kotori-San happened to stop by that liquor store on the Tochigi Citizen's Line and I asked him about Nishibori, and he said they sell it, so I asked Nobby to rush over to the store ๐. So I asked Nobby to come over ๐.
I checked out the sakewa and found out what everyone thought of it ๐ค, and they all praised it highly, saying it was "mildly gorgeous and has a nice sweetness๐It left the strongest impression on them๐And everyone was talking about their love for Tochigi๐ฅฐ, which made me happy again ๐ฅน.

Shirakami Yamahai Junmai Shu: 65% pure rice sake at full strength

Today's snack was high rolls and cream cheese salmon from Costco! The aroma is a bit alcoholic, and the initial attack is light and easy to drink. If you're used to sake made from raw sake, it may seem a bit thin, but it's easy to drink! It's a good sake for a mealtime drink.

Since I came to Fukuoka, I wanted to try a sake that I couldn't drink in Tokyo, so I decided to try Hiyotsuru for the first time.
The first aroma is sweet with a hint of acidity.
In the mouth, there is a slight astringent taste with a strong sweetness that is typical of unfiltered raw sake.
The astringent taste lingers and gradually fades away.
It was quite delicious ๐ถโจ.
The second one is at the Hiyotsuru brewery.
Of course I went there after drinking it the day before ๐ .
There was no sales or tasting, so I just looked at it and that was it.
It looked like some brewers were working on bottling.
