Special Junmai sake with 60% polished rice ratio I bought the jacket because of the impressive cartoonish, retro Showa-era "Oniotome" illustrations. The illustration was done by Minako Sonobe. It is made with "Homare-Fuji" sake rice developed in Shizuoka Prefecture. It has a calm aroma and an elegant, gentle taste with a well-balanced flavor, and it tastes great on the finish!

I went to Fukuroi Sake House Yamaya for Kaiun Tachiharu Asashimusubori, and I was able to buy it without reservation every year, but not this year 😅I screwed up 😅. A love that has lasted over two years has been fulfilled. I had a bottle in Ito izakaya two summers ago and enjoyed it so much that I was looking for a bottle to buy someday. I finally met the devil maiden in love😄. It is slightly effervescent and has a rather firm, juicy sweetness, but the mouthfeel is light and cuts through easily. The aroma is greenish, like unripe bananas🍌. Fresh and easy to drink, it goes well with oily fish 🐟.

I was going to travel to Shimane in the summer and wondered if there were any good sake breweries. I looked up sake breweries in Shimane and found "Oh! There's the Gassan brewery that you often see at Sake-no-wa..." - "Oh. Tomonori..." - "You go to the sake brewery but they don't sell it..." So I couldn't resist and popped it until the day of the trip. Just by twisting the cork, the gorgeous aroma spreads, the gassy feeling spreads, and the fruity taste like a Japanese pear spreads. OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

Special sake that I got as a gift when visiting the shuzo. It is new year blended koshu released from the brewery every new year time. It blended the Daiginjo from year 1989, 2001 & 2013. Surprisingly, its still very light body - unlike other koshu which makes you too full. I like the aroma, while soy sauce and umami is significant, you can also feel the raisin, dried grapes inside. On palate it leans more towards coffee, toffee & dark chocolate. Serving hot is a good choice too.

#Drinking at home The spiciness, sweet umami, and moderate acidity come quickly, and while enjoying the aftertaste, the bitterness comes unexpectedly. It is similar to the first sake released from the brewery, but I think this one has a clearer outline. I think Doukan is stable in its line of slightly sweet umakuchi at first and finishes with bitterness. Like Okura and Tamagawa, if the direction of the flavor is consistent, we can drink it with peace of mind. Anyway, Shiga sake is generally very tasty.
