Japanese Sake Fest @ Osaka Bay Tower (・ω・`) The effect of oak barrels, or something quite close to whiskey, but the mellowness and acidity of sake is also alive! I know it's just my imagination, but I feel it's similar to the whiskey akashi. Of course, if I didn't know any better, I wouldn't have thought so. I also had a bottle of Junmai Namae in the heated sake corner, but my memory is a little fuzzy on whether or not my brain was getting the alcohol when I got here! I do remember that it was meant to be heated, but that's about it.

Sake from a brewery famous for Ryujinmaru. It has been a very long time since Kirakuri. After Shikishima, tkmts-san was drinking Ryujinmaru, and I wanted to try something of Takagaki-san's sake, so I chose Kirakuri. This time it was an unfiltered raw Nakadori. It has a caramelized taste with sweetness and a sense of maturity. It's just a coincidence that there is a succession of sakes with a sense of maturity, such as Washin, Shikishima, and Kirakuri.

My wife has a slight taste disorder, but since she couldn't spend time at her parents' house 😊, we treated her to another New Year's meal 🎍. The wine to go with it was "Kyo no Hana" purchased at our favorite liquor store in Kushiro, Sagajo Shoten. I was torn between this and "Tatsusen" brewed by the same brewery, neither of which I had ever tasted before, but I chose this one because of the "fantastic rice" description 😊. Kyo no Hana No.1! There really are a lot of different sake rice varieties available: ‼️ It has a sharpness that is typical of Fukushima sake, but at the same time, it has a moist and gradually delicious flavor 😋.

Kyo-no-Hana from the sake bag I bought in Fukushima. It is sweet but not too sweet, so it is very tasty. Today I paired it with chawanmushi (steamed egg custard), grilled hanpen cheese with mentaiko (cod roe), and ahi jio with nori (dried seaweed), all of which went very well together.

Maruishi Brewing's Chohyo year-end festival, second bottle. This sake is made from Manzai, an edible rice that has been revived in Okazaki. It is a junmai daiginjo, and naturally it has a beautiful, fruity taste, but compared to Nitoshi, it has more robust rice flavor than acidity and sweetness...I think. Am I biased? Is it my imagination?

This is the first time I've bought bamboo island since the new system was put in place. According to the official website of the Japan Famous Sake Association, the rice is Nihonbare and Yamadanishiki. The lees are submerged and when mixed, it is slightly effervescent and petite. Slightly sweet and bitter. I wonder if it is better to drink it while it has gas? Once the gas is gone, the bitterness will make it hard to drink 🤔. I wonder if it would be sweeter to drink the alcohol by itself?

OSAKA-JO SAKE SQUARE 2023 It is a very crisp, dry, deep-flavored Ajiginjo. The aroma is subtle. The mellowness is more apparent in junmai sake. This is also a good sake. I've always wanted to try a henohenomoheji. I found it at an izakaya I usually go to, so I tried it 💪. Grain aroma. The taste is quite robust with a gentle sweetness. The back end is astringent? It's good with a sharp finish 😋. I would like to drink it at various temperatures, but since it is an izakaya, I can't go that far 😇. I had it with Ara sashimi and it's great ‼️ I've never had ara before, but the meat is quite firm and filling 🐟. I have a faint memory of ara being in a delicious book 🤣.

I bought it at a sake shop in Kintetsu Department Store. I can't read "mother-of-pearl" 🤣I heard it is read as "Uzume", but if you type "den" for mother-of-pearl in your phone, it will come up 😁. If I lived a normal life, I would never use this kanji 😅. I got the impression it's a pineapple with a bit of bitterness 🍍. It was sweeter when I tasted it, so maybe it's sweeter after some time, but it's 500ml and I can't wait that long 🤣. Maybe the aroma is a bit peculiar.

Purchased at Kintetsu Department Store's Sake Tour. The label is a sheep kept at the brewery. It has a slight sweetness, and is full, rich, and powerful. It has a strong richness. Rice used is something from Mie Prefecture Aged for 4 years, pale amber in color. Smoky and graininess with the color as it is. The sweetness is elegant, and the spiciness in the aftertaste has an impact on the throat and nose. It is a little peculiar, but I personally like it! I don't know what the original flavor was, but it has a nice aged feel. ❣️
