@sakebar Fukuzo Fire-brewed sake using Fukuoka Prefecture's original yeast called F44. Slightly sweet aroma of 🍍 on the nose. The palate is slightly sweet with a hint of 🍍. The aroma is as if it was made with hana-yosuyu in mind. However, the aroma is weak because it is fire-aged. The sweetness is also weak due to the weak aroma. I am a little curious to see how it would be like if it were a fresh sake. It was delicious ✨🍍.

National Sake Fair 2025 Day 2 ㊱ Fukuoka ① Kiku Bijin Sake Brewery in Miyama City This is the first time I have heard of this sake brewery! According to honda's post, Kitahara Hakushu's sister married into the Kikubijin Brewery, so the brewery has a connection with Kitahara Hakushu. It is named after the head brewer of the Shirotaki Sake Brewery in Kouzenjosui. The color is clear and colorless. The aroma is full of fruity melon! This is the first time I've seen this warehouse. The rice used is Maikaze. As the name suggests, everything, including the yeast, is from Gunma, and it seems to be an annual event. The mouthfeel is mild. It is bitter-sweet with a slight banana aroma. It gently finishes with a hint of umami. It seems to have a lot of depth. Well-balanced and cohesive sake. After a few drinks, it was quite late, so I headed home while eating a golden dharma bento commemorating the 140th anniversary of Takasaki Station. I will close my Gunma trip with "Akagisan" and "Funao Taki"! Sweet and sugary aroma like sugar. The taste is smooth and silky, and while it has a Gunma sake-like quality, it tastes more like a sweet sake derived from brewer's alcohol. This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

Izakaya a short walk west of Fukuma Station Sake from Shikoku seems unusual and I end up ordering it I drink it cold. Clear and colorless It has a full flavor in the mouth. The flavor spreads slowly. Slightly woody nuance when served with sashimi. It is good to drink with snacks or to enjoy the sake itself. The name is impressive, and although it does not have the sharpness of the flavor of a single sword, I like it very much.
