The sake is easy to drink and has no peculiarities.
Thank you very much.

I had an image of junmai sake as being smooth and lacking in punch.
I had an image of junmai sake as being dry and lacking punch,
but this one had a ginjo aroma and was delicious.
It was delicious.
It also had a slightly carbonated taste, so it wasn't too bitter.
A bottle was gone in no time...
Is that always the case...
My partner is a repeat customer of Tama Kashiwa.
It has a great taste and is perfect for eating....delicious!

A thin, trailing bitterness appears.
The lingering bitterness and alcohol lingers in the back of the throat.
And the umami of rice that can be felt on the exhale
A good balance.
You can drink it forever!
Delicious!

I got this sake from a friend.
It has a yellowish color and a strong rice flavor, similar to Tamagawa or Ishikawa sake 🤔.
It was a sake that goes well with sashimi 🍶.
Purchased at a very old sake brewery established in 1532. It is even better than expected. The aroma is subdued, but the flavor of the rice comes through honestly. It is suitable as a food sake, and I have high expectations for heating it up tomorrow.

Mellow sake. It has little sweetness, but it is juicy and fruity, with a concentrated umami flavor and a strong sake taste! This is my favorite kind of sake. It is indeed an Akita sake!

4.1
The aroma is crisp and thin, with a sense of maturity.
When you put it in your mouth, it goes in smoothly and without any stickiness,
After a short while, the umami flavor increases its pressure.
The mellow flavors of raisin butter and nuts are balanced with the oiliness of the butter.
It also has an affinity with the cinnamon aroma of yatsuhashi.
While there is a good tension in the texture, it does not interfere with the meal, and the rice flavor is perfectly delicious.
It has a balance that one does not often drink.
This makes a good side dish.
Good.
Maruyu
The Inoue Sake Brewery in Oita, located on the border with Fukuoka Prefecture, is a brewery with a long history. Named after Ms. Yuri Inoue, the only female toji in the prefecture, this sake is made with the utmost care, starting from the rice cultivation process at the company.
The taste is melon-like sweetness. It has a richness and fruity flavor that is typical of unfiltered, unpasteurized sake. It is a modern bottle.
I didn't know there was such a sake in Oita, so I guess sake is very deep. Incidentally, this sake is said to be limited to 1,000 bottles. Perhaps it is a seasonal version of the Yuriai brewing series.

Fire-brewed sake using Fukuoka Prefecture's original yeast called F44.
Slightly sweet aroma of 🍍 on the nose.
The palate is slightly sweet with a hint of 🍍.
The aroma is as if it was made with hana-yosuyu in mind.
However, the aroma is weak because it is fire-aged.
The sweetness is also weak due to the weak aroma.
I am a little curious to see how it would be like if it were a fresh sake.
It was delicious ✨🍍.

The bottle on the right was opened three days ago. The left is a new bottle.
When cold, it is a full-bodied sake with the umami of rice, as if the white rice is being smothered. When warmed up, it became sweeter and softer. It was a relaxing taste.
