At home. The third Nara sake without permission - ‼️. Kita Sake Brewery is located in Gobo-cho, Kashihara City and was founded in 1718. My son used to play baseball and we used to go to Sato Yakuhin Stadium near here. This is the first time for us to visit there. The aroma is not so strong, but there is a slight sweetness and alcohol. When you put it in your mouth, you can taste the sweetness, sourness, dryness, and the gradual feeling of alcohol. Oh, is this the ultimate in dryness? For now, I will only taste it tonight and wait for tomorrow to see how it changes. There was almost no change in taste after the second day. It is dry, but it has a sweet taste and is not unacceptable.

Miyogiku is a sake brewery located near Kashihara Shrine. I bought a Junmai sake and this Honjozo sake. It has a very high density of flavor and richness even in hiya, and the acidity is enough to go well with the drinks! It is also very well balanced in terms of both comfort and drinkability! It is even better when heated! This is wonderful! I bought a small bottle the day before because I had to buy a lot of things at Ise Jingu Shrine, but I want to buy another 4 bottles! Before going to the Kashihara Shrine, we went around the tombs around the shrine, and especially the Unebiyama Northeast Mausoleum was amazing! It was scary! Furthermore, although I must have been to Kashihara Shrine when I was a child, it looks bigger than the image I had when I was a child. Normally it should look smaller than it did when I was a child, but it was the opposite. I guess I felt the greatness of Kashihara Shrine.

Gifu All-you-can-drink ① A business trip to Yamaguchi and then to Gifu the next day! Both of us have ongoing projects, so we go there regularly, but this pattern is rare! I made it into Gifu without too much delay, so we decided to go out for a drink. Work in Yamaguchi is still going on, but Gifu has come to an end. I may come here on a spot basis, but not at the rate of 2-4 times a month or so like before. So? Let's go 😁. Gifu all-you-can-drink local sake 🤣1 hour, 2000 yen! Isn't that cheap? I've had a lot of Gifu sake, but I haven't had it yet 😆. The first one is Kai Kai, stylish bottle 😘. I've been curious about this one, but haven't tried it yet! It's sweet and sour on the palate 😋. It goes smoothly, refreshing and soft. This is recommended to be served cold with snow, so on the rocks! It's low al and it's gone in a moment 🤣.

I can't believe I'm going to be here. What a delicious aroma! It's been sitting in the fridge for 3 years. I couldn't bring myself to open it... I wonder if it's matured? Clean and refreshing taste with no corners. Lactobacillus-based sweetness and sourness Delicious! Now it's time to stir When I stirred the thick oli... Hmmm... I shouldn't have mixed it... Nagano Ueda Railway Journey🚃Day 3 From Ueda, take the Ueda Dentetsu Bessho Line🚃 to Bessho Onsen (Bessho Hot Springs) ♨️ Lunch at the diner that was reflected in the setting of the 18th film Otoko wa Tsuraiyo. The aroma of the food was very strong. But it is sweet and gentle, not harsh. It has just the right amount of maturity. Goes well with Nozawana. It softens the salty taste of Nozawana. There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. A slight bitterness seeps into the tongue and a tangy sourness on the tip of the tongue. The taste that spreads in multiple directions in the mouth is like a rocket firework. As the day goes by, the acidity will become more rounded and a sense of unity will emerge.

@sakebar Fukuzo Fire-brewed sake using Fukuoka Prefecture's original yeast called F44. Slightly sweet aroma of 🍍 on the nose. The palate is slightly sweet with a hint of 🍍. The aroma is as if it was made with hana-yosuyu in mind. However, the aroma is weak because it is fire-aged. The sweetness is also weak due to the weak aroma. I am a little curious to see how it would be like if it were a fresh sake. It was delicious ✨🍍.
