#Nagasaki Goto Town# w river/o/pine/hori/fuku/yama I visited with a customer from Hokuriku. To compete with them with seafood, We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki. We consulted with them in advance and asked them to secure it for us at the market. We had them as sashimi. It was like a smaller horseshoe crab. They were very pleased 😁. Now for the 🍶... For a moment, I thought it would be dry. I thought it was dry, I felt sweetness. The freshness goes well with sashimi. The shrimp was served in miso soup later 🎉.

Like yesterday, Shiratake-san. I think it was the one with the most intense flavor during the tasting (we received a lot of it, probably... You can still feel the umami and sweetness of the rice. The aftertaste is pleasantly bitter and lingers for a long time. (PS: After about 30 minutes of pouring the cold sake into a Kimura glass piccolo, the aroma of ripe melon spread through the glass. After drinking it, it is still melon. It went from rice to melon🍈) My mistake, or rather my assumption, was that the addition of brewer's alcohol would refresh me. But after tasting it at Hakutake-san, it was the opposite... The same goes for this sake. The sardine was grilled with salt, well oiled and grilled to a high strength. The skin is crispy and you can even eat the bones. The flavor spreads and goes very well with white rice. The yeast we were allowed to taste, 1801 and No. 7, was said to be used at the brewery. I believe this is No. 7... I'm sorry if I'm wrong, it's frustrating to drink and not know 🙏.

The only sake brewery in Tsushima. Shiratake Sake Brewery (Former Kawachi Sake Brewery) During the waiting time at Tsushima Airport, I enjoyed Tsushima venison? and enjoyed it, but I was not feeling very well, so I will refrain from commenting at this time. I drank it again at home. I first drank it cold, but it had a strong umami and sweetness from the rice. The sweetness lingers in the aftertaste. I could go on and on with just this one... (Come to think of it, I would drink it on the rocks...) (By the way, we were told that it can be served on the rocks or with fruit.) Added -> I remembered that and tried it on the rocks. No way, it became more, rice, this is delicious. It's not the type that stands out for its flamboyance, but rather the rice, so I imagine it would go well with anything that goes with rice when it's hot 💭. I'll fill in additional information when I have that opportunity. 60°(Additional note I wonder if I made it too hot as the alcohol became more pronounced? Maybe it would have been better to warm it up to human skin... I drank it all up, so I couldn't compare any more...

National Sake Fair 2025 in Osaka_55 Fukui Prefecture Booth ⑦ Hatakeyama Sake Brewery is located in Imajo, an inn town in Minami-Echizen-cho, Nanjo-gun. Representative brands are Yuki Kirara and Hyakkibune. ◉Yuki Kirara Sakahomare Junmai Daiginjo The flavor is citrusy, acidic, and slightly reminiscent of yogurt. It is quite likeable and delicious. It is a small brewery with only three people working on it, but they will be awarded the Kura Master Platinum in 2023 for this sake. When I drink Sakahomare, I often associate it with yogurt with citrus.

National Sake Fair 2025 part52 Fukui Prefecture⑥ Hatakeyama Sake Brewery in Minami Echizen Town Snow Kirara has been bartered with Mr. Jive for a drink in the past. Polishing ratio 40%, SakaHomare 15%, Sake degree +1, Acidity 1.8 3,630 yen Beautiful and muscat-like. I thought it was interesting to see the gap between the sake quality and that of the rough or first pressing 🤔. I forgot to take a picture of it, so I borrowed it from Mr. Neemuchi.

Brewed by Endo Sake Brewery in Suzaka, Nagano Domuroku Keiryuu Activated Nama Shu Junmai This sake is new to me. When I tried it, I found it to be foul tasting (@_@). Among all the nigoris I've ever had, this is definitely the best, It is definitely the best nigori I have ever had 😋😋😋😋😋😋. It's a heaven of sludge and shuwa shuwa 😂😂. #Funabori# A bit of a bad look 😅. Homemade sundubu jjigae with a side of homemade sundubu jjigae. We had this one. The sundubu jjigae was I kept the spiciness low so that my family could also enjoy it. I made the best use of the soup stock of shijimi clam. The sake does not have much rice flavor 🤔. Maybe because it is a ginjo sake. It is quite light.

Purchased at Hankyu Department Store's traveling SAKE. It has a gentle taste with a sweet flavor that comes in the latter half of the bottle. It has a spicy taste, but it also has a fresh fruitiness. I also tasted Omachi, but Yumesasara was definitely my favorite. On the third day, the impression of sweetness and acidity became stronger.

Tochigi sake featured in Hankyu Department Store's Traveling SAKE. After drinking Kiyokai nigori, it was getting crowded, so I left once and returned when it was empty. We compared Yumesasara and Omachi. I had a preconceived notion that Omachi would be tastier, but I found Omachi to be too strong and subtle. Yumesasara was delicious, so I bought it.
