It has a nuance of matured sake, a soft mouthfeel with a rich umami flavor, and a sourness that makes the tongue feel tight. Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! At last! At last, Nara sake complete! The last one was 100㏄. It was a very impressive drink. However, one of the chopsticks is bent in a bow.... It has been bothering me for a while. Japanese Sake Fest @ Osaka Bay Tower (・ω・`;) I see that the sake is from Nada. I recently found out that there is a small sake brewery in Nada and bought some Houmusume, which was outstandingly delicious! And this Hamafukutsuru! This is also wonderful! It has a beautiful breadth of flavor and just the right amount of body. The best part is the price: about 1,100 yen! I wish there was one in my neighborhood! When I go to Kobe for Onsen (hot springs), it is so close to the station that I might even stop by a sake brewery just for this!

I see that it is read as "Sekepikozan". If I had not drank this sake, I might not have been able to read it correctly for the rest of my life. The taste is fresh and quite rich. The bitter bitterness comes out in the back of the mouth, and the taste is sharp and clean. The sweetness is modest for Aizan, and although it is not the modern type of sake, the umami flavor is very well conveyed. Not bad!

I've been wanting to try this one for a while...they use 1801 yeast. It's gorgeous and fruity. It's also quite sweet. I think it's the most gorgeous of all the Yukihiko Yama brands.
