I drank Kaze no Mori for the first time. My first impression immediately upon opening the bottle was that it was pleasantly gassy and rummy. There is also a slight sweetness and a well-balanced acidity, and for the price, the cosmetics are excellent. I paired it with tonight's menu, a chicken and vegetable miso nabe, but I think it goes well with just about anything.

I bought a bottle of Nama Sake last year from takeshon Sake Shop because I got it from them and it was so good 😊. It's just as gorgeous and sweet as the hi-ire, but I think it has a juicier umami 🤔.

Today we opened a bottle of Isshaku-Suisei Kijoshu 😀. We compared Gohashi Momo-iro Nigori, Senkyoku Kijozo-shu and Shichihon-Yari 😀 ❓❓I was told that Ippakusuisei is a Kijozo-shu but it is not 😀. I was told that Isshiro Suisei is a kijoshu but it's not ❓. It certainly has a strong sweetness, but the white nigori and fizzy feeling is normal active nigori sake 😀 ❓ Is it really a kijoshu? Is it really a kijoshu? If this is really a kijoshu, this sake is really amazing 🤣!

I drank it for the first time in about three years. The rice is Yamadanishiki and Hyogo Yume Nishiki from the special A district Yoshikawa. Unlike past sakes, it has a gaseous and clean taste. I wonder if it is the effect of the gravity system and the Shin-Gin rice polishing. It is gorgeous and sweet, but I think I prefer the Shippo series. I haven't tried all of their products, but I think their sweetness and gorgeousness are the best among Banshu Issen's products. But Banshu Issen tastes good no matter what you drink. I would like to try some of the local products in the future 🤔.

Nigorinpic ④ Finally, from today onwards, all the sake will be nigori (nigori is the Japanese term for a type of sake) 😀. Today we opened a bottle of Kido's nigori 😀. We will compare the nigori of Kasumikuchiman and Naraman and the fuyu of Harada 😀. I also made the fuyu lukewarm 😀. Kido's nigori is the sake that made our family a nigori sake fan last year, and even after a year, the fruity taste hasn't changed 😀. I really think it is the best sake in terms of cost performance 😀. Another surprise was the Harada Fuyu lukewarm 😀. All the curds from the hiya were removed and it became round, sweet and delicious 😀. I definitely recommend heating Harada Fuyu to lukewarm 😀. Finally, our secret weapon for making heated sake has arrived at our house 😀! It's an electric warming bot that can keep the temperature at 75 degrees Celsius 😀. It's also great to make lukewarm sake with it 😀.

I worked hard this week 😫. On a day like this, we had a little better sake 🍶. It's Jikin Special Junmai Namae. Kiyamasa Shuzo was founded in 1818. Takasago was the main brand. In 2005, the 6th generation brewer, Tadakatsu Onishi, released a new brand "Jikin" which he brewed as a toji himself after training under the Tajima toji. As you know, the current situation is as follows. The word "Jikin" expresses the brewer's desire to "live the present moment to the fullest, without getting caught up in the past or the future. Jikin's standard sake is special junmai. This is a pure sake. The koji rice is 20% Yamadanishiki and the kake rice is 80% Gohyakumangoku, and the rice polishing ratio is 60%. The appearance is yellowish crystal. The aroma is elegant and fruity, with a gentle but pleasant acidity, and there is a faint scent of rice in the background. On the palate, one senses a soft, gentle sweetness and umami, and then a fresh, gentle acidity spreads quickly with a slight gassy feeling. The lingering aftertaste is a good sense of softness and a hint of bitterness that gives a sense of closure. Well, Jikin is still good. ☺️ I loosely drank about 2 gou of it and released my stiffened mind and body. ☺️

After the Nabeshima sake comparison was successfully completed, I chose Sakune new sake 😀 . We compared Nabeshima New Moon and Jun Daidai Tashizuku 😀. I chose this sake from the fridge because I thought it was the only sake that would be competitive with the two Nabeshima's 😀 It has a solid taste and is delicious 😀. It is a delicious sake with a strong taste 😀. However, I think the taste is too strong compared to Nabeshima's two bottles 🤣. But for some reason, this sake is new but it's not raw 😅. So I tried heating it up to lukewarm 😀. Hi...it tasted different 😀. When I had it cold, it had a very sharp new sake impression, but as soon as I heated it up, it became rounder and the taste calmed down 😀. It's fun to see the changes in sake 😀.

The fridge is wide open...back 😀 Yesterday we had a bit of a jump in between birthdays, but today we're back to Jikin as planned 😀. Today we opened a bottle of Nigori, which we got in a 4-round lottery for Jikkoman 😀. Actually, the lottery at that time was a choice between 30 Daiginjos and 15 nigori 😀. The odds were against the Daiginjo, but as a nigori lover, I gave up on the Daiginjo and tried the nigori 😀. I had half given up because the odds were so low, but I was lucky to win 😀. My impression of Jigori-Nigori was that it was the most robust nigori sake I've ever had 😀. I compared them to the same Jigori-Omachi and Aizan, but I always feel that the nigori is sweeter when I compare them from the same brewer, but for Jigori-Omachi and Aizan, I felt that the nigori was rather sweeter 😀. But only for Jikin, I felt that Omachi and Aizan were rather sweeter than Jikin 😀 But I liked this nigori the most 😀. In my opinion, the order of deliciousness is nigori -> Aizan -> Oumachi, but of course it is a matter of taste, and I think it is probably a matter of preference for each drinker 😀. I think that every Jikin has its own unique taste and is a very enjoyable sake 😀.

Refrigerator Open ③. From today, we are going to start the drink comparison project 😀! First of all, we will compare the 4 consecutive winners, that one, that one and this one 😀. The store where we bought the sake, Yamamoto, is the one we started patrolling for new sake after we started Sake-no-Wa 😀. This store has an irregular lottery for Jigokan, and I won the first time I applied for it 😀. I got the Tojo Yamadanishiki, opened the bottle immediately and was drowned in the deliciousness 😀. Next time I won the lottery, I decided to keep it for a while because it was too good to waste, but then the miracle happened that I won 3 bottles in a row, 4 bottles in a row in fact, and 3 bottles have been occupying my refrigerator for a long time. The store owner told me that it was the first time for someone to win that many bottles in a row, and Pon-chan told me to buy a lottery ticket, so I asked Kaorin to buy one for me 😅. Jikin Kimoto Akaban Omachi Wooden Okehi New Year's Eve and New Year's Jikin Festival🎉! Kimoto Heated Sake Drinking Comparison on the 4th day🤣‼️ We compared the sake made from the traditional sake yeast.... We also compared the heated sake 🍶. Both Yamadanishiki and Omachi are originally very refreshing I'm glad I didn't have to drink them warmed up 💦. I think we didn't need to try it heated 😅... But it was still delicious! Today's snowman is Ozeyuki 😀. I don't want this snowman to melt 😀. The two snowmen to drink are the two snowmen of Izumibashi and Shinomine 😀. Is it the first time in a long time that your wife has said something wise 😅. I'm sorry, but I'm not sure. This sake is not sake: ⁉️ If it's not sake, what the hell is it ❓😅😅 I think she probably wanted to say that it's a very clear and beautiful sake without the alcohol taste that she doesn't like 😀. I thought it was such a beautiful, easy to drink, yet delicious sake 😀. The snowmen also all have their own personality, so it's quite an interesting drinking comparison 😀. And the labels are cute 😀. By the way, the back label of Oze Yukidaruma is also snowman shaped and cute 😀.

KENKEN Ichi! I've had Fuji Masamune before, but this is my first time with Kenkonichi. It is slightly sparkling and has a refreshingly sour taste. It is fruity and sweeter than I expected. Surprisingly, I liked the taste. It tastes quite bitter when you drink it again.

For today's new sake, we chose Houou Mita's Heki-ban new sake in honor of our Tochigi loving sakewa friends 😀. For comparison, I chose Winter Higuma, Sanchi and Mutsu Hatsusen Nouveau 😀 😀. I can't even compare them 😅. I would say that the freshly opened Sanshu has the best taste, but the freshly opened Houou Mita was the best 😀. I can't even begin to compare good sake 😅. After all, they are all delicious 😀.

First time at Yamashiroya. I've always been curious about it, but missed buying it every year😅. The sake is made from a traditional sake yeast yeast yeast. I think it's rare to have a sake yeast yeast in Niigata. It has a fresh and gassy flavor with a hint of citrus. It is easy to drink, with a sweet flavor that you would expect to be more pungent. It seems to be made under the concept of a food sake, but it can also be drunk on its own. It is not flashy or assertive, but it is very tasty. It's like a serious honor student character that there is at least one in your class 🤔. It may be one of the best sake among all the kamishimo sake. It's spicy but much sweeter than Yong which has the same sake strength of +5. If it tastes this good, I'm curious to try the first class raw sake 🤔. On the 3rd day after opening the bottle, it feels much spicier than the first day. Is it better to finish it on the first day for those who like sweet and tasty sake? I think the reason why it felt spicy was because my meal was sweet seasoned 🤔.

It's been a super long time since I've had a drink at home at Yuki no Bijin. I've been wanting to have a drink ever since I heard about the heavy rain damage, but I wasn't able to drink because I wasn't in line at the right time to go... The rice is Misato Nishiki, which is not mentioned on the bottle. It has a fresh and crisp taste with a sweet muscat-like flavor. It also has acidity and is delicious. The aftertaste is short. It tastes best when it is just opened, and after a few days, it becomes more "al" 🤔.

Today's sake is a new sake from Tanaka Rokugo in connection with Kyushu 😀. I turned 65 this October, so I think I will be having it quite often until next October 😀. By the way, one of the congratulatory messages on my birthday asked if my last name was Tanaka-san. My late mother's maiden name was Tanaka 😅. Compared to the 6513 I drank on my birthday, this Tanaka Rokuugo gave me the impression of a more refreshing and clean sake 😀. UA Momiji and Yokoyama, which we compared today, are also delicious, but this was the most beautiful and easy to drink sake among them 😀.

Hiran Happy New Born This is a new sake from Hiran✨. Fruity, strong sweetness... Clean acidity and slight bitterness. Good balance of sweetness and sourness I think it tastes great no matter who drinks it... 😋. A little too sweet on the first day... Mismatch with grilled mackerel💦. I think it's hard to match with meals 😅... After 1 day, on the 3rd day... Sourness and bitterness came forward and settled It is now easy to match with meals 😊. I enjoyed it with soy milk pot 🍲.
