I wanted to taste both the front and the back.
This is the Origami version made from 80% Kame-no-o and 20% Yamadanishiki.
It is made with a special attention to detail, using the "ikuhashi-zukuri" method of brewing, unfiltered, fire-aged, and assembled.
The aroma is modest but slightly fruity.
The mouthfeel is slightly sweet and soft with no gas.
The mid-palate is balanced with more umami,
The aftertaste is slightly bitter and spicy.

The aroma is fresh and fruity (→ perfect score), the mouthfeel is sharp and tangy (→ perfect score), the inside is clear (balanced) like water (→ mmm, not enough), and the aftertaste is clear with bitterness and spiciness (I want more bitterness and spiciness). This is the one you want to drink under the blazing sun with a dry throat. It is a "summer sake" of the type that soaks into the body smoothly, rather than with a gusto.

→The five flavors seem to disappear quickly in the mid-palate, and a subdued aftertaste comes in. This was a delicious sake.

I had wanted to drink it because I had enjoyed it at a yakitori restaurant in Tama Plaza before, and happened to see Hina Hana Mama's post about it, and since it was on the menu, I decided to order it 😉.
It has a mild fruity aroma. It has a soft mouthfeel and a moderate sweet/umami taste, but the hint of aroma is slightly melon. The acidity is also mild, and a sweet-tart aftertaste lingers. I found out later that it was dry, but I have notes from when I drank it, but there is no mention of dryness, and I don't know if it's because it's super soft water, but I didn't feel much of a dryness 🤔.

Although it is not listed as a sake with a specific name, the rice polishing ratio is 50%, so it is in fact a junmai daiginjo.
The aroma is gorgeous, with a fruity melon-like ginjo aroma. The mouthfeel is mellow and soft, with a slightly sweet but umami flavor.
The aftertaste is clean and crisp, giving the impression that the sweetness is not dragged down.
We paired it with a rare piece of tuna grilled on a half-skewer, but it did not clash with the flavor of the ingredients and went well with them in an elegant way.
It is easy to drink despite its sweetness, and can be enjoyed on its own or with a meal.

The Aomori AQE series has been shown in various guises up to this point. Let's finish off with a sake called "Tasake". Now let's go! The aroma is milder than usual Tasake. The sweet aroma of rice is present, but it is subdued. I wonder if the slightly sweet brewing water is a common Aomori identity, but I like it. The sweetness is like that of pears at first, and then gradually comes like that of strawberries. The sweetness, however, is more subdued than that of the usual special junmai. What is even more surprising is the feeling that comes after swallowing. No way! It's a dry rice wine?
This may have been the most surprising of the AQE series.

Hello everyone, it has been a while. I had a cold and was very sick for the past week, so I had to stop drinking. If I were to drink for the first time in a while, I would choose Toyobai. So, here we go!
The rice polishing ratio is exactly the same as that of Toyobai's regular special junmai, and I wonder if all the brands have the calmness of special junmai as their theme.
The aroma is gorgeous, like pears and apples. The aroma is sweeter than the usual special junmai. The smooth and sweet brewing water, which is typical of Toyobai, brings a slight sweetness and astringency like red wine, and this lingering taste becomes a classic with its sharpness. It is best to drink it smoothly during a meal, or if it is spring, with wild vegetables. This special junmai was a little more modern than usual.
Due to the stock, we will not be able to introduce other Toyo Sakai until a little later, but please wait with warm eyes.

It may be a little sweet, but the mild aroma is probably unique to Hato Masamune. The soft and silky brewing water is the best characteristic of Hato Masamune. The flavor is pleasant without being too strong, and the marriage of sweetness and milkyness is very good. The sharpness and bitterness of the aftertaste make it a wonderful sake to keep drinking. I don't know about IMADEYA's AQE because they don't seem to disclose the sake rice, but for each of the four breweries, Tasake and Hato Masamune use Hanafukuyuki and Toyobai uses Toyobai rice, right? I don't know the rice used for Hachisen Special Junmai. I don't know the sake rice for Hachisen Special Junmai. It had a strong sweet and umami flavor, and because of the high alcohol content (17%), it tasted very doshiri. I have another bottle of another collaboration sake to compare.

Lately, I have been drinking only sake from Kyoto and have not had any Aomori sake at all. Then, oh well, Aomori AQE will be limited to Hijimaya this year... Toyobai, Tasake, Hachisen, and Hato Masamune... I had to buy it. So I bought them.
