Although it is not listed as a sake with a specific name, the rice polishing ratio is 50%, so it is in fact a junmai daiginjo.
The aroma is gorgeous, with a fruity melon-like ginjo aroma. The mouthfeel is mellow and soft, with a slightly sweet but umami flavor.
The aftertaste is clean and crisp, giving the impression that the sweetness is not dragged down.
We paired it with a rare piece of tuna grilled on a half-skewer, but it did not clash with the flavor of the ingredients and went well with them in an elegant way.
It is easy to drink despite its sweetness, and can be enjoyed on its own or with a meal.
