Shigeke Shuzo is the only sake brewed by the only sake brewery in Iki City, Nagasaki Prefecture, which resumed sake making in 2018 after having stopped making sake for a while or something. The effort put into brewing sake for the first time in about 30 years must have been considerable. This sake brewery seems to have a bit of a muneatsu story. My personal image was that there were many sweet sake in the lineup, but this time I dared to choose a dry sake. It is a dry sake that is not too sweet and can be drunk easily, but it has a good aroma and a fruity feeling. It has a fruity aroma. It is a bit like grapes and muscat with a moderate sweetness. It is a modern dry wine. It is a type of sake that accompanies food without being assertive. It is good with sashimi and sushi. It is also good on the rocks.

This is the first time for you, Kuheiji. The initial aroma is sweet with a hint of acidity. In the mouth, there is a slight carbonation and refreshing acidity. The sweetness was subdued on the day the bottle was opened, but after the second day, a mild sweetness and umami flavor emerged. It is different from other Nagoya sake, but it is an elegant sake and delicious 🍶. I wonder if the fresh sake that comes out in February will be more spectacular?

Junmai Ginjo Dewa Sanzu Nama Sake from the south. It has a strong fruity aroma. What kind? Like pineapple, like muscat... The color is clear, colorless, and beautiful. It has a sweet attack that is not typical of the South, but the solidity of the finish is very southern, which makes me happy. It's the standard kind that burns in the mouth. It's the one that makes Ryo-san's unique guttural pause. This flavor is sweet, but the taste is not sweet.

When I went to buy a popular Nagano sake, I was curious about this one, too, so I bought them together. Mikotsuru Yamae Nishiki Junmai Ginjo Unfiltered Nama-shu It's been a while since I've seen this Mikotsuru, but I loved the taste of this one! I found out that it won the IWC2021 Champion Sake, and it has a refreshing sweetness with a dense apple flavor, a mild mouthfeel, and a crisp acidity that is superb! This is one of the top sakes I have had this year! Rice polishing ratio: 50%. Alcohol content: 15%.

Tenmei after almost a year. The first aroma is a faint citrusy sweet and sour aroma. When the supernatant is drunk without mixing in ori, it has a bitter citrus flavor and a pungent taste. When the top clear liquid is mixed with ori, it has a gentle citrus acidity and a moderate sweetness and umami of rice. The slight bitterness gives it a sharp finish. I wonder what number I will drink next year. It was delicious 🍶.

On Xmas day, we will open a bottle of this one. Hirotogawa Junmai-shu Nigori Namaishu Speaking of nigori, its popularity seems to have skyrocketed recently, and it is sold out as soon as it is lined up at the store, I happened to see it at a liquor store where I stopped by and got it! When I opened the bottle, I found it to have a mild taste, just like nigori! The first sip is rich with the sweetness and flavor of the rice! As you taste the tender taste on your tongue, you can enjoy a slight lingering bitterness. The overall balance is good, and the nigori-ness can be enjoyed, so it is a bottle that everyone will like! Rice polishing ratio: 60 Alcohol content: 16%.

When I dropped by the Okura Honke on my trip to Nara last month, the wife of the brewer told me about how they pressed the light nigori of Kinzumi in the first week of November due to fermentation going too fast because of the heat this year, but it was released just about a month later. I wonder if they were letting it sit to let the flavor settle? Well, when I opened the bottle, I heard the sound of gas. You can hear the sound of gas. When you drink only the supernatant, you can taste the sweet and sour taste that is typical of No. 7 yeast. When the lees are mixed in, the moderate sweet and sourness is further suppressed, and it becomes a dry nigorigo with a spiciness that feels like a shwash shwash shwash shwash shwash shwash. We paired it with a light nigori cake with sake lees that was given to us by the brewer's wife when we dropped by Okura Honke. It was delicious✨

North Island Warming Frogs. I saw it on Instagram and went to buy it because of the label. It's Mame-noen Omachi. Luxurious. It has a unique acidity that is typical of a sake brewed using the traditional sake yeast yeast, and a slightly floral flavor that is typical of Omachi. I heated it up, but I'd like to try it at different temperatures.

The first Kuroemon! When poured into a glass, it has a slightly yellowish color. A honey-like aroma emerges, with sweet and bitter tastes and slight acidity. The last is again an aroma of matured honey. It seems to have been aged for about 2 years in 2021BY, and the aroma is rich, mellow, and powerful. Even when heated up, the strength remains the same and the flavor is even richer 👍.

Ura-Roman is a blend of several Junmai Ginjo classes from the Romain series. When poured cold in a glass, it has a gorgeous aroma, followed by a full sweet umami flavor, then acidity, spiciness, and finally umami bitterness, with a good balance of sweet, spicy, and sour. When heated, the sweet umami expands and the spiciness sharply cuts through the sweet umami. Heated sake is perfect for this time of year when the weather is getting colder. ☺️ You can enjoy the different tastes of cold and heated sake 😊♪
