Since ancient times, the city has nurtured a "culture of prayer and fruitfulness," expressing gratitude to nature for the blessings of the four seasons. The second of the four seasonal divisions, Risshun, is celebrated on February 17. On February 17, which falls on Risshun (the first day of spring in the four solar terms), prayer festivals are held at shrines across Japan to pray for a bountiful harvest, followed by the start of rice planting preparations on April 5, which falls on Seimei Day in the 24th solar term. In conjunction with this, they hold a fertility festival on April 5 to pray for a good harvest of rice. Sake breweries in each area brew their famous sake using locally grown rice. This sake had a gentle aroma and a refreshing taste. I enjoyed this sake as a food sake. It can be served with both Japanese and Chinese food. The sake rice is 55% polished Hitanishiki.

It is a limited edition sake brewed with a sake rice called Hananishiki. It is said to be the prefecture's first rice suitable for sake brewing, developed by the Kumamoto Prefectural Agricultural Center. It is said to be shorter than Yamada-Nishiki and less prone to collapse.  It is a very easy to drink sake with a mild taste.

I stopped by a sake store in Yawata City, Kyoto, which I have visited in the past and discovered it. It is a popular brand, so I bought it for the first time.  It is a sake brewed with flat polished rice. I learned that "Takachiyo" does not have a specific name or rice polishing ratio. Takachiyo" does.  My impression is that it is very juicy and sharp. It has a hint of pear.

Ishikawa Shuzo reminds me of [Tama Proud] in Tokyo, but this is Ishikawa Shuzo in Mie. It is a cold sake with Momiji🍁 printed on it. It had a mild aroma and was easy to drink.

It was a clear, dry sake with no harshness, as is typical of Kochi sake 🍶 and it was very spicy anyway. At first it was served cold. On the fourth day after opening the bottle, I enjoyed it warmed. The sweetness increased and became milder. The sweetness increased and became milder. After that, it became mild when drunk on the rocks with a tin tumbler. You can enjoy it in various ways with a bottle. Interesting 🤣.

I came across this brand at the Takashimaya Sake Festival. When I looked it up, I found that it was the brewery that makes Kunikiku amazake. You often see it in supermarkets and sake mass merchandisers. The brewery has been in business for 100 years in Asakura. They also make shochu and whiskey. The sake in the photo is a junmai ginjo-shu brewed with Yamadanishiki produced in Fukuoka. It has a slight sweetness and a mild flavor, It has a slight sweetness, mellow flavor, and finishes with a refreshing sharpness. It is best served with tempura and other light dishes.

 The Takashimaya Sake Festival was held for the first time in four years after Namba Corona was moved to the fifth category after the Corona disaster. It was a major event, bringing together 700 brands of sake from 100 breweries at the entire venue. The event also included a talk show and autograph session by Kazuhiko Ota. Since I attended on a weekday, I had plenty of time to spare, but I think it would have been even more crowded on weekends. I think it would have been more crowded on weekends.  The sake was junginshu brewed with Yumeginko. It was mellow and easy to drink. I did not feel much alcohol, and I could smell some woody aroma.

ccop's home delivery catalog includes a weekly selection of famous regional sake. So far we have had "Iori" from Okayama, "Drunken Whale" from Kochi, "Hakkaisan" from Niigata, etc. I wondered how {coop handles sake}. I was wondering how Coop handles sake, but it seems to be well packaged, so I buy it on rare occasions. The sake is a limited edition junmai ginjo that has been aged over the winter. It has a slight pineapple🍍 like fruity aroma. It has a clean finish and on the first day I tried it with smoked mackerel, and the mackerel's maturity (?) was lost on the taste. On the second day, I drank it with chestnut rice and salted rice. On the second day, it was good with chestnut rice and grilled chicken with salted lemon.

This is a sake that has received many reviews. It has been a long time since I last tasted it, but the taste of rice and the crispness of the acidity are just as good as they were in the past. This time, I paired it with horse sashimi. Looking back, Fukushima Prefecture is the second largest producer of horse sashimi after Kumamoto Prefecture. I tasted it with Kyushu's sweet and spicy gooey soy sauce sauce with chopped green onion and ginger. The sweetness of the lean meat of the horse sashimi matched well with the sauce, and the sake went down a treat. As a side note, I heard that in Aizu, they eat it with special spicy miso mixed with soy sauce. I would like to try it if I have a chance.

I found an unfamiliar face in the sake section at Takatsuki Hankyu and bought it. The sales floor is small, but it is interesting to take a peek at the rare brands they sometimes have in stock. When the bottle is opened, it smells like pears. The sweetness spreads in the mouth, and the acidity is very sharp and lingers in the mouth. It is easy to drink and highly recommended.

The rainy season has ended nationwide and summer is in full swing. It is a good idea to keep free cooling agents available at supermarkets in the freezer and apply them to your neck and armpits as needed to keep the heat out. Aside from the sake, I tasted the Kyo no Onna Sake this time. It was an easy-drinking, sweet sake with low acidity. The sweetness increases as the day goes by. However, the cold tofu with soy sauce was a bad match.

July 7. The first cicadas were heard this morning! This is the third sake I bought at the Kyoto Takashimaya Sake Festival. When I tasted it, I liked the pineapple-like aroma, the round mouthfeel, and the balance between the umami of the rice and the mouthwatering acidity, so I bought a bottle. It is a popular Omachi rice. When I asked the person in charge, "This is the first time I have seen you in Kansai," he replied, "I don't have much time to spare..." He was a quiet and serious person. He seemed quiet and serious, so I thought, "I would like to meet him again. This brewery is located in Kurashiki, famous for the Bikan Historical Quarter, and also brewed under the brand name of "Ishichi".

This is the second bottle I purchased at the Kyoto Takashimaya Sake Festival. It has an elegant aroma, a soft taste, and a beautiful finish. It goes well with Japanese dishes such as bacon wrapped in cheese, ginkgo fish with fried gingko mushrooms, simmered sardines, and more! This brewery offers 550 yen for shipping in the Kansai area, so I might consider mail order...

Kinoshita Sake Brewery is known as a brewery brewed by an English toji. This sake was the first bottle I purchased at the Kyoto Takashimaya Sake Festival. It was a junmai ginjo recommended at the tasting. The label on the bottle said "Ichi-go yeast" but I couldn't remember what it was. After returning home, I looked it up and found that it was a yeast isolated from the "Sakura Masamune" sake mother. I had drunk summer sake "Ice Breaker" and "Fukubukuro" before, but this was the first time for me to drink sake made with No.1 yeast. The image I have of Tamagawa is a heavy sake with a solid structure, but this sake was easy to drink. After opening the bottle, the aroma was like grapefruit or melon. The sweetness spreads on the palate and the acidity quickly breaks through. It was very tasty 😋.

Purchased Niigata sake for the first time in a while. Junmai sake brewed with Gohyakumangoku. It was a gem with a smooth taste and rice flavor. ‼︎

Sake with no specific name on the body label. It is labeled as 83% Mishima Omachi, but it does not say "Junmai-shu" (Mishima Omachi is a sake rice that was revived about 60 years ago). (Mishima Omachi is said to be a sake rice that was revived about 60 years ago.) The ingredients and alcohol content are also written in small letters, making them difficult to understand. The aroma after opening the bottle is like whiskey. It tastes like it has been laid down in a whiskey barrel, and although it is light, it is a difficult sake to drink, and I thought it was not suitable as a food sake. On the second day, I drank it on the rocks, and it tamed the harsh taste, but the peculiar flavor remained the same. It was the same in a tin tumbler. I think "Bongu" and "Ryusen" are better suited for me...
