This was the second bottle I bought during my visit to the Ryuriki brewery. It had a mild aroma, soft mouthfeel, crisp acidity, and was a gentle sake that I never got tired of drinking. Since I am also a railroad fan, I caught this cream-colored 115 series train that I saw at the Aboshi station detention line. I heard that there are only a few days left to see this train. -John

The Takatsuki Sake Juku project visited Honda Shoten in Aboshi. Inside the store, a specimen of Hyogo Nishiki, newly developed by Hyogo Prefecture in 2011, was on display, attracting the participants' interest. It is produced by crossbreeding Yamada-Nishiki with another sake rice, and the rice is said to be short and resistant to collapse. Although they were not able to tour the brewery for various reasons, they listened to the passionate talk of the fifth-generation brewer. All of Honda Shoten's sake rice is suitable for sake brewing. The brewery is particular about the terroir of its sake. This time, I got a bottle of Yamadaho special junmai. The quality of the sake was full and coherent with a refreshing acidity. The sweetness increased day by day, and it was so delicious that I wished I had bought another bottle or two.

This is a junmai sake from a brewery that specializes in yamahai. I have drunk several items of "Tsunekigen" in the past, but this is the first time I've brought it to Sake-no-wa. I met it at Takatsuki Hankyu Square and brought it home. It has a strong full-bodied flavor, a sharp acidity, and a freshness that is typical of nama-shu, making it a great match for any dish. It is also delicious on the rocks! It was my favorite type.

It is a light and dry sake like Niigata sake, but it is too clean and light and has a softness, but if I may say so, I don't like it. It is too clean and light and soft, but not to my taste. It's a special honjozo (55% rice polishing ratio) that doesn't interfere with food. But I couldn't feel any sake-like flavor...

The Noto earthquake devastated 11 breweries in the Noto area. However, Suzuki Shuzo Brewery sent a donation of 300 yen for every bottle of "Rebirth" sold, while Shinzawa Brewery and Kurumata Brewery took care of the surviving sake mash from Kazuma Brewery and squeezed it. They will send the money after the recovery. It is wonderful that they are working hard and helping each other when they are affected by the disaster. The "wa" in "sake no wa Let us also support the affected areas and people for a long time to come!

This is the second bottle purchased at the direct sales shop adjacent to the brewery. It is a delicious sake with a mellow aroma, freshness, and the delicious taste of rice. Near the brewery is the famous Aoya Plum Grove, where plum blossoms are in full bloom from February to March.

I have organized many drinking parties during my working years, and I believe that the most blissful time for me as a drinker is when I spend time with my school friends, fellow hobbyists, and others who share the same spirit.  I don't need to wait for the words of the experts to tell me that relationships in the company are thin. They gradually fizzle out over time. That is why we should cherish the connections we have now! And with that in mind, I'll be sipping a glass of wine again tonight... Tonight's sake was a junmai sake from the Joyo Shuzo brewery. The balance of rice flavor and acidity seems to be good, and the sake was delicious warmed up.

This is a Junmai-shu purchased at the end of the year at the brewery. It is a junmai sake that I bought at the end of the year! But when heated up, it was a mellow and full-bodied sake.  The first kanji used for sake is "yama" (mountain), and "tsuru" (crane) is the second most used, followed by "sho" and "mune". The first sake brewery to use "Masamune" was "Sakura Masamune" in Hyogo Prefecture, followed by "Kiku Masamune" and "Ski Masamune. Other names include "Kiku-Masamune," "Ski Masamune," and "Obaste Masamune. It is interesting to look up trivia about sake🤣.

I visited a nearby temple at the end of last year so that everyone can enjoy sake in good health again this year.  I am currently a recipient of a special old-age pension, but I am in such a position that I will receive the old-age pension from this spring.  In the past few years, sake has been produced overseas and imported to Japan. But it is not called "sake" because it is not made in Japan using Japanese rice as the raw material! Let's dredge up our knowledge this year! ^_^ I'm going to re-read the books on sake once again...  The first sake to be opened this year was Kagamiyama Daiginjo! Fruity aroma like Daigin, silky, delicate, clear and sharp, it made me enjoy New Year ^_^!

This is my last post for this year. I have posted about 50 times on Sake-no-wa, but I have been into sake for about 40 years. In total, I have drunk more than 2,000 brands of sake and I am thankful that I have been able to do so without any health problems. The only things I have taken care of are drinking the same amount of water when drinking and visiting the dentist to check my periodontal disease and caries. I hope to keep my healthy life expectancy and enjoy sake in the future...ne!  This time we opened a bottle of sake from Ikoma, Nara. It was the first time in almost a year that I visited the brewery store and purchased this sake.  It had a clear acidity and a hint of citrus aroma. I could faintly feel the clear acidity and citrusy aroma. It is said to go well with Japanese food, so I paired it with a nabe (hot pot). It was delicious. By the way, "mountain" and "crane" are said to be the most common kanji used for sake.

Recently, the Ministry of Health, Labor and Welfare (MHLW) announced the "Guidelines for Healthy Drinking of Alcohol." According to the guidelines, the appropriate amount of sake to drink is about one cup of sake at 15 degrees alcohol by volume. In order to enjoy sake while taking care of your body Be sure to drink an equivalent amount of temperate water. I would like to make this a habit in order to enjoy sake in a healthy way.  The sake is clear, dry, and has a gorgeous aroma. You can also taste the umami of the rice. When heated, the flavor increases and lingers in the mouth. I thought again that it is better to enjoy junmai sake cold or warmed up ^_^.

This sake won the Regional Trophy🏆 in the Junmai Daiginjo category of the IWC2023 SAKE category. It is a delicious sake with soft acidity and a fresh taste. It is a high quality sake that is not considered to be a daiginjo, and is priced at less than 3,000 yen per bottle. It is a highly recommended bottle with a quality of sake that is hard to believe it is a daiginjo!

This is the second bottle following the Suwa Miyamanishiki I posted earlier! This time, both Mikotsuru were purchased from the Co-op's home delivery service. The Co-op catalog used to carry mostly packaged sake from Nada and Fushimi, but recently the number of locally brewed sake has been increasing. I buy them occasionally because I think they are carefully handled, even though they are fire-brewed sake. Hitogokkyo" has a fruity aroma and a sharp taste on the first sip. It has a beautiful aftertaste and can be enjoyed over and over again. Four days after opening the bottle, it became even sweeter and easier to drink.

It's been almost a year since I started Sake no Wa. I have been using this app for a year now. I thought it was the ability to talk about sake, the national drink, at a sake party. I have been thinking about what I can do to make the sake boom more temporary and what I can do to make the sake boom more permanent. I am enjoying my sake life while thinking about what I can do to make sure the sake boom does not end temporarily... Mikotsuru is one of the breweries located in the Suwa area. The brewery is located near the Shimojya Shrine of Suwa-taisha, which is famous for the Omihashira Festival. The Miyamanishiki Jungin is an excellent, well-balanced, easy-drinking sake with a delicious taste. It has a gaseous and somewhat fresh taste. It is also a highly recommended item.

Aroma: A fine sake with a hint of transparency. I enjoyed it with the image of fresh water gushing out of a valley in the mountains. It is also good with steamed chicken! It seems to go well with light snacks.

Since ancient times, the city has nurtured a "culture of prayer and fruitfulness," expressing gratitude to nature for the blessings of the four seasons. The second of the four seasonal divisions, Risshun, is celebrated on February 17. On February 17, which falls on Risshun (the first day of spring in the four solar terms), prayer festivals are held at shrines across Japan to pray for a bountiful harvest, followed by the start of rice planting preparations on April 5, which falls on Seimei Day in the 24th solar term. In conjunction with this, they hold a fertility festival on April 5 to pray for a good harvest of rice. Sake breweries in each area brew their famous sake using locally grown rice. This sake had a gentle aroma and a refreshing taste. I enjoyed this sake as a food sake. It can be served with both Japanese and Chinese food. The sake rice is 55% polished Hitanishiki.

It is a limited edition sake brewed with a sake rice called Hananishiki. It is said to be the prefecture's first rice suitable for sake brewing, developed by the Kumamoto Prefectural Agricultural Center. It is said to be shorter than Yamada-Nishiki and less prone to collapse.  It is a very easy to drink sake with a mild taste.

I stopped by a sake store in Yawata City, Kyoto, which I have visited in the past and discovered it. It is a popular brand, so I bought it for the first time.  It is a sake brewed with flat polished rice. I learned that "Takachiyo" does not have a specific name or rice polishing ratio. Takachiyo" does.  My impression is that it is very juicy and sharp. It has a hint of pear.

Ishikawa Shuzo reminds me of [Tama Proud] in Tokyo, but this is Ishikawa Shuzo in Mie. It is a cold sake with Momiji🍁 printed on it. It had a mild aroma and was easy to drink.

It was a clear, dry sake with no harshness, as is typical of Kochi sake 🍶 and it was very spicy anyway. At first it was served cold. On the fourth day after opening the bottle, I enjoyed it warmed. The sweetness increased and became milder. The sweetness increased and became milder. After that, it became mild when drunk on the rocks with a tin tumbler. You can enjoy it in various ways with a bottle. Interesting 🤣.
