<Aged bitter-sweet sururi, 2 months old Yonekawa-san was drunk just two months ago. I was looking at it here and thought it was hard to lose. My impression last time was that it was a classic regular sake, with an interesting taste centered on bitterness. To be honest, it was not my favorite type. It was a 3 on my favorite scale. However, the lady at the store told me, "Try this one. It tastes different. So, I repeated the same saké that had been open for two months. As before, the aroma is almost imperceptible. I think there is a faint honey taste. When I put it in my mouth, oh wow! Totally different! Two months ago, it was a little less sweet and a little more bitter, but the bitterness has mellowed and the sweetness has clearly increased. The bitterness has become mellower and the sweetness has clearly increased. And there is a gentle sense of aging. It's delicious! I had just had two more of the big three, Jushi Masamune and Jushi Masamune, the week before this one! What a blessing to be able to drink all three in such a short time! The aroma is a fine delicious alu-howan. The aroma is of fine-quality umami aluhowan, with the deliciousness of rice and a hint of banana. The refreshing alcohol is also pleasant! The mouthfeel is smooth, mildly sweet and fluffy. From there, the sweetness is maintained, while the umami and bitterness are rich and soft. Ahhh, ohhh, ohhh.... It has a very rich flavor, but the aftertaste disappears beautifully and smoothly. The way it disappears is also beautiful! It is a dry sake with a sake strength of +6 to +7, but it doesn't cut off immediately; instead, it seems to disappear before you know it. It's beautiful. As the name suggests, this sake was laid down in the snow for about two months. The aroma is of soft grapes and melon. It also has a mildness that reminds me a little of autumn ripening, which raises my expectations even higher. In the mouth, it is softly umami, refreshing water. The next moment, all the tastes of sweet, delicious, acidic, bitter, and alcoholic flavors suddenly opened up! And then, the umami bitter alcohol in the middle of it zings even more. The entrée of the day was a natural sea bream sashimi, so I had the second glass selected to go with it. The aroma is caramel, rice flowers, nuts, and a hint of lactic acidity. It is a classic type with a touch of earth, but with a slight minty freshness. The mouthfeel is smooth, sweet and sour! What is this? It is both refreshing and powerful at the same time.
