<Pirisshwa, a little dry, balanced. The first impression on the palate is a slight sourness with a hint of tanginess. From there, a gentle, well-balanced sweet, sour, bitter, and umami taste softly appears, and then quickly recedes. It is a little bit dry and a little bit sour. The acidity and bitterness are lemon, and the sweetness and umami have a rice-like feel. What is wonderful about this sake is its fragrance. A complex and refreshing breeze, with various flavors mixed around the alcohol, blows through the mouth in a whiff. Umami! There were only two slices of sea bream left in the entrée, but you could drink sake just from the soy sauce that followed. In fact, it tastes so good. The sweet soy sauce with a strong umami taste and the sake flavor on the other side of the soy sauce blended well together. If I were to use a Ghibli analogy, I would compare it to Ashitaka, the main character in "Princess Mononoke. It is not sweet, refreshing, and sharp.
