<Fresh, bitter, dry and fruity. Hakuba Nishiki has been pursuing this sake since it impressed us with its autumn ripeness. As the name suggests, this sake was laid down in the snow for about two months. The aroma is of soft grapes and melon. It also has a mildness that reminds me a little of autumn ripening, which raises my expectations even higher. In the mouth, it is softly umami, refreshing water. The next moment, all the tastes of sweet, delicious, acidic, bitter, and alcoholic flavors suddenly opened up! And then, the umami bitter alcohol in the middle of it zings even more. Oh, it is surprisingly dry. The umami and bitterness are sharp, and the fragrance is very strong. It is fresh and clear, even though it has been lying in the snow. Delicious. It is a food sake after all. It is a type of sake that opens up with a flower when matched with a meal. I especially like to match it with meals that have a strong umami flavor. If I were to use a Ghibli analogy, it would be Honjo from "The Wind Rises. A good man with bitterness. He plays a supporting role to complement the main actor.
