This sake was awarded the number one prize for 12 consecutive years from 2006 to 2017 in the "Professional's Choice of Sake to Go with Eel," an annual competition held by the Japan Famous Sake Association! It was even inducted into the Hall of Fame. Amazing!
The aroma at room temperature is powwow honey-sweet, fluffy alcohol. Yes, this and this.
When you put it in your mouth, it's like a sweet and sour taste. There is no fruity taste at all, but lactic acid acidity and honey sweetness. There is a good sense of maturity. There is not much bitterness, but there is a pleasant astringent taste. Of course, the umami taste also comes out.
The individual flavors are not that strong, but as a whole they are quite robust. The aftertaste, however, is a nice sweetness. It is very good. This firmness is definitely something I would like to pair with eel.
If we compare it to Ghibli's "From Up On Poppy Hill", it is like Chancellor Tokumaru in the movie "From Up On Poppy Hill". Almost no aroma, but slight honey lemon.

The fresh herbal-like bitterness and alcohol taste is pleasant. The sweetness is only slight. The sourness is not big, but it is lime-like.

Sake made by Wakabisu Sake Brewery that goes well with Baby Star Ramen.
The aroma is very faintly acid-alkaline and clean. It is very classic.
When you put it in your mouth, you can feel the acidity. The lactic acidity is very clear. But then the umami comes out! This is powerful. There is not so much bitterness, but there is an astringent taste.
Well, it's not bad, but it's not that good. At least, it's not a stand-alone drink. Now let's try it with baby star.

I don't know about this sake, but I can't go wrong with the fact that it is a "hangsuri" sake. There are many ways to call it "Hanging Pressed," "Fukuro Hari," "Shizukutori," and "Shizukusake," but all of them are really tasty. I have high expectations for this one as well.

Following the previous Red Sabi, here is the Sabi Neko Rock Sake Comparison. This is Junmai Daiginjo Gin Sabi.
The aroma is a refreshing alcohol splash. The aroma is a splash of refreshing alcohol, with a hint of lemonade.

Nice to meet you, this is Rusty Cat Rock from the Inomata Sake Brewery in Itoigawa City, Niigata Prefecture. It is said to be an alternative special junmai sake dedicated to all those who love cats, music, and sake. Yeah, I don't know what it is, but it's cool.

The aroma is a strong acidity and umami.
It starts with a hard acid-Yami sound in the introduction, and then the rust starts to pound! The umami drums start rampaging, and the acidic guitar stirs up a storm. Then, the alcoholic vocals overtake the drums and make a strong appeal to the listener. It was a gut-punching alcoholic drink like alternative rock.

This is the first time I've ever seen a packaged sake that was unpasteurized.
The aroma is slightly lactic and acidic.
The mouthfeel is mild and clean with a gentle acidity. Then, sweetness and a touch of alcohole. The alcohol taste is also very clean and easy to drink.
It is totally different from the modern fruity sake. However, it is also different from the Kamonishiki Ginjo we drank before, where the alcohol spreads quickly. It is a light classic type that I would like to drink with fish. Delicious!

Following the previous Junmai Ginjo Unfiltered Nama, this is a local brand from Kobayashi Shuzo, which brews Houou Mida, Mitatsuru. This time, it is a fire-brewed Junmai.
The aroma is of alcohol, muscat acid, and rice sweetness. It is a bit more robust than Jungin.
In the mouth, it is sweet and sour from the start! Then, the umami is very smooth.
It is rather modern. But it is not just modern, it has a strong umami. It has a sweet fruity flavor similar to Houou Mita, but it also has a robust umami. I see, this sake also has both Hououmida's character and that of a local sake.
The couple Satsuki meets in the scene where Mei gets lost in "My Neighbor Totoro," a man on an auto tricycle. This one, too, is somehow a little more modern, even though it's an auto tricycle on a paved road in the countryside in the 1950s. And it looks more stout-boned than Junmai Ginjo.

Nice to meet you, Takemasamune from the Nagurayama Sake Brewery in Aizuwakamatsu City, Fukushima Prefecture. As the name of the brewery suggests, this is a reissue of the original brand name of the brewery that brewed "Nagurayama". The name of the brewery was originally Takemasamune Shuzo.
The label is nice and classic. But it is unfiltered raw sake, so it seems that the contents are not made in the traditional way. What kind of sake is it? Let's drink it right away.
The aroma is slightly citrusy and fruity.
The mouthfeel is fresh and slightly acidic. From there, sweetness and alkali gradually come through. It has a good balance. Nothing stands out. I thought it would be more sharp because it is a freshly pressed, unfiltered, raw sake, but it is surprisingly refreshing.
