<Refreshing, powerful, and sharp.
This is our first sake, "Shonosato" from Kitashoji Sake Brewery in Izumisano City, Osaka Prefecture.
The entrée of the day was a natural sea bream sashimi, so I had the second glass selected to go with it.
The aroma is caramel, rice flowers, nuts, and a hint of lactic acidity. It is a classic type with a touch of earth, but with a slight minty freshness.
The mouthfeel is smooth, sweet and sour! What is this? It is both refreshing and powerful at the same time. The second half is a powerful umami aldon! The lemon-like acidity is accentuated. It finishes off nicely. It is delicious! And it was a strange sake.
If I were to compare it to Ghibli, it would be Spiller from "The Borrower Arrietty". He is the little boy who appears in the middle of the movie. He is wild and seems to be living with the earth, yet somehow classy and slightly refreshing. What? Spiller's voice actor was Tatsuya Fujiwara?
