This is the first time I have had Take-no-i Shuzo ☺️ It's sweet and spicy with a fresh aroma. Bon appétit. A jump of acidity! Immediately the sweetness and spiciness comes through, followed by the taste of omachi from the back of the tongue, spreading out Jeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeee! The lingering aftertaste continues and fills me with a sense of drinking 😋. It's not too stale, but rather refreshing, so it can be enjoyed in a relaxed manner 🤤.

Clear yellowish liquid. It has a sweet, spicy and fresh aroma. When served cold, it was fresh like whipped cream when it entered the mouth, and soon after, it was enveloped by spicy and rice flavor. In the mouth, there was a sweetness in the center of the tongue, a pungency in the back, and a glimmer of gloss on the tip of the tongue. As the temperature gradually settled down, the sake became dry and a little thicker in the mouth, and the firm rice flavor spread out, leaving a pungent taste at the back of the throat and a glossy feeling on the tongue. It is a sake that leaves you with a sense of taste 😋. The third day after opening the bottle. After the taste settled down and the refreshing mouthfeel was followed by a shiitake mushroom soup-like flavor, the sweet and spicy taste spread from the center of the tongue to the back of the mouth. The flavor increases and you can taste it even more 🤤.

Tokachi😎, the first Hokkaido sake I have had in a long time. I'll have it with high expectations. I was told that it can be enjoyed cold, room temperature, or lukewarm, so I started with the lukewarm sake! Pouring it into a sake cup, it has a slightly yellowish color. The aroma is sour and refreshing. The sweet and sourness jumped in first, followed by bitterness, and then the freshness spread further down the throat 😚. Instantly, you feel as if you are drinking a light plum wine 😉. When served cold, the flavor was gentler than lukewarm. The freshness of the plum wine is followed by a hint of sourness. The throat feel is very gentle and pleasant 😋. The sourness lingers on the back of the tongue and a bit of bitterness appears 😎. The change in flavor is unusual and keeps me entertained without getting tired of drinking it 🤤.

I don't remember when I drank it before. But I have had it. I opened the bottle! You can faintly detect a melon-like aroma with a strong freshness 😉. Pouring it into a sake cup, it is clear and yellowish. The taste, I thought I felt a refreshing, acidic, fruit juice-like flavor, but it turned into a salty taste? How strange 😱. As you taste the saltiness, an astringent bitterness emerges from the back of your mouth and spreads across the surface of your tongue. As I was enjoying its lingering taste, I also found a faint wagashi that came up even later 😎. As I thought when I drank Naohiko Noguchi Laboratory before, the sake made by Mr. Noguchi is "chemistry"! You seem to enjoy scientific reactions 😉. I drank it while eating yakitori as a snack and it lost its saltiness😅.

The aroma is fresh and sweet Nabeshima aroma 😋 Almost colorless and clear. On the palate, a sugary citrus-like sweetness jumped into the mouth along with a firm acidity, followed by an astringent bitterness from the back of the tongue😊. Finally, after the astringent bitterness, the sweetness of the wasanbon again appeared on the tip of the tongue😎. It's been quite a while since I've had Nabeshima 😚. It's also my first Junmai Daiginjo, so I'm soaking up the afterglow 🤤.

To everyone at Sake-no-Wa! Happy New Year ☺️ My own response remains poor as my work situation has not changed, but I wish you all the best for the new year 🙇. Well, I searched for a suitable sake for the first bottle of the New Year from the sake we have in our house now, and I found ......... ‼️ It's "Katsikoma" which we miraculously got at the end of last year ❗ I'll have it 😚. It is clear and a little yellowish. A faint aroma of junmai sake 🤤. The acidity and astringency came through at first, and the sweetness spread from the tip of the tongue to the whole tongue with a time difference. This sweetness seems to be from wasanbon. I cannot describe it well, but this sweetness finally becomes a fruity taste in the center of the tongue. Then, there is a slight astringent taste at the back of the tongue 😎. I can't think of any sake that can compare to it, it tastes like sake 😉. "Sake that knows true luxury", that's the perfect word for it 😍.

Non-pasteurized Future Sake II: The World of High Temperature Fermentation I think this will be the last sake we will have before the end of the year 😉. Kaze no Mori is one of my favorite sakes and I'm really looking forward to it 😁. There is a sticker on the crown that says "The cork may fly off". I was afraid to raise the crown a little and as soon as I did, it flew off 😰. When I regained my composure and poured it into the glass, the aroma was fresh and strong. The aroma is fresh and strong, with a slight yellow tinge. In the mouth, acidity, young melon sweetness, and a roasty bitterness spread from the tip of the tongue all at once 😆. Soft carbonation, pleasant 😋. The astringency and acidity remain in the mouth, leaving a lingering taste that is enjoyable 😍.

I was able to purchase it in a drawing at my favorite liquor store 😎. It's my reward on the last day of work for the year 😁. What's that? The stopper is tight. It's stuck! I turned it with all my might and it worked. Little by little, little by little, it made a shhhhhhhhhhhh sound. The sound became quieter, so I opened it all the way! I turned it to ......... and it started to leak. And then it came out. I waited a little and opened the cork all the way and found a heap of bubbles in the mouth of the bottle! When I poured it into a gulping cup, it was full of bubbles and I thought it was going to overflow, but it managed to stop just in time. Finally, it was ready to drink😅. It's a light cloudy color with a yellowish tint. It's very light and light, and the carbonation is very strong. The carbonation is a little rough. The taste is completely muscat ❗ Slightly sweet and sour muscat❗ There is no way to stop gulping as it is not disgusting at all 😰. I even got the astringent aftertaste of grapes 🤤.

My favorite turtle sea❗ It smells fresh and sweet 😉. A light yellow color. Light acidity comes in and the freshness spreads. A light melon-like sweetness is transmitted from the tip of the tongue, which turns pungent when it reaches the back of the tongue 😎. Furthermore, after that, the entire mouth was enveloped in a delicious flavor 😋. As the temperature settles down, sweetness starts to appear. On my way home from work, I passed by a temporary store as I was changing stations. There I happened to find a bottle of Nihonmori Junmai Daiginjo Nama Sake. It was the cheapest price I had ever seen for Junmai Daiginjo! I bought it on impulse! I will have a sip. It smells like regular sake 😉. When poured, it is clear and has a yellowish tinge. The spiciness and acidity jumped in at once. It's just right. ‼️ The flavor is robust and I don't feel like I'm missing anything. With a time lag, I felt a creamy sheen from the center to the back of my tongue, and an astringent taste appeared further back on the tongue 😎. There is no complexity in the flavor, but each flavor is simple and fully enjoyable. I prefer it when it is well chilled as it gets a little peculiar when the temperature settles down 😋. and on the third day after opening the bottle, the acidity appeared first, followed by the complex sweet and spicy flavors. It is not heavy. Looks like I should have let it sit for a bit 😉.

I noticed it at a liquor store I usually visit and asked about it. I was told that it is the first product of Sake Brooklyn LAB, a project by Sake Brooklyn Brew-ing CO. The brewer is Mr. Ueda, a graduate of Abe Sake Brewery. Let's try it 😚. It is cloudy white, a little spicy, and has a refreshing aroma. In the mouth, it is a gentle drink without much shwashiness. The freshness is strong and gorgeous. The taste is clear, soft, sweet and spicy rather than spicy. It spreads out gradually and the flavor comes through. ☺️ It is so easy to drink that you can easily drink more sake without any tsumami (Japanese rice wine) 😋. After a few days, a soft spiciness was followed by a soft sweetness and then a slight taste of rice 😎.

This sake won the 2022 Kura Master Platinum Award and the 2020-22 Wineglass Delicious Sake Award "Premium Junmai Category" Gold Award 😋. It is clear and has a yellowish tint. It has a rummy aroma. This is probably the first time I've had snowy Matsushima. I have been curious about it, but have never had a chance to drink it, so this is my first time 😎. The sake I will be drinking is Junmai Harazake Umi KAI - Hitomebore - Unfiltered and Unadjusted, which won first place in the Junmai Sake category at the SAKE Competition 2023! When poured into a glass, the color is a shade of color that you can't tell if it's there or not. There is no turbidity. The aroma is not so strong that you can barely smell it. A firm acidity spreads through the glass. It is delicate but you can sense its strength 😊. The freshness is emphasized and there are no peculiarities. It has no peculiarities, so you can't help but keep drinking it 😰. When I drank it after about 3 days, the acidity remained strong and the flavor became clearer. The astringent bitterness is widespread, followed by freshness and sweetness 🤤. When you drink it, you can feel the spiciness at the throat. The sake's character is now well expressed 😋.

Sake made with Hokkaido Rice Award 2023 It is a prize-winning sake in the professional and distribution restaurant category. The aroma is refreshing. It is fruity. It has a slightly yellowish color. Transparent. It has a juicy mouthfeel, with a fruit juice-like flavor spreading out, sweetness in the center of the tongue, bitterness at the back of the tongue, and acidity spreading out gradually on the tongue. As you continue drinking and the temperature settles down a little, the taste of rice appears in the aftertaste. The sweetness also increases 😚. As you continue to drink it and pour it anew, the complexity of the flavors also begins to emerge 😚. Complexity, spiciness, and acidity, it's a strange change that deepens the flavor 🤤.
