The sweetness spreads on the tongue like a sweet mango to me. And at the back of the tongue, an indistinct astringent bitterness. The complex flavor remains.
As it cools down, it becomes even sweeter and mellower 😘.

Sugihara-san and his son have been brewing sake together, and his father, Shoji Sugihara, passed away.
