Junmai Ginjo aroma.
Almost colorless and transparent.
Soft and clear acidity jumps in!
A sense of freshness.
A sweet and spicy taste followed, and then a bitter taste appeared at the back of the tongue.
It is a strange feeling, but it is as if there is a lingering aftertaste, as if I had eaten a melon with little sweetness and a thin taste.
The bitterness becomes more pronounced as the temperature settles down, so I prefer it when it is well chilled 😋.
After a while, it tastes like a spicy bitter glaze.
