Whenever I go to Kyoto, I stop by a liquor store, which is a special distributor of Matsunotsu no Tsukasa. The special junmai is a rare class of sake that only a limited number of liquor stores carry. This time, however, they had a bottle of nama-shu on hand, so I bought a four-pack of nama-shu and a bottle of hi-iru (hi-iri). It is interesting to note that the sake and acidity levels change between the nama and hi-iru versions. Today's sake was the first. The first sip was delicious. Sweet but delicious. I was at a loss for words. Matsu no Tsukasa is one of my favorite brands of sweet sake with a sharp aftertaste, so it is easy to pair with sashimi and other dishes. And above all, heated sake is delicious. But it's hot. I was sweating after drinking hot sake.

Good evening, Maruwa-san 🦉. Thank you for the sake from Shiga 😊It's delicious and goes well with food...I see it can be warmed up! I've never had it 💦 I'll keep it in mind until the fall😁.

Good evening, Pon-chan. Shiga's sake is good, with many subdued types that go well with meals. Personally, I like Matsu no Tsukasa or Shichihon Yari.

Nagano Sake's favorite Meikyojosui al-soaked ginjo sake. Hamazushi's favorite fried broccoli and cartilage. Yunomi's favorite Karatsu. A little special, on a day when you want to pamper yourself. The rice flavor and ease of drinking, an excellent balance, is typical of Nagano.

One of the pleasures of business trips is drinking at business hotels. At my regular hotel in Kokura, I have a drink with snacks I bought at MaxValue. Fukuoka has great sake, fish, and meat. I also want to eat ramen. Sake is from Kitaya. A brewery that makes a good honjozo is sure to be good. It is delicious. This is my favorite Fukuoka sake. Kitaya and Morinokura. A traditional and delightful sake. This business trip lasted three days. We compared a 65% polished Yamada for a distributor and a 60% polished special honjozo for the local market. Now, which sake should I bring back this time?

I'm happy to say that it's for work. I travel to Fukuoka a couple of times a year. Each time, I always pack my suitcase, but I always buy this Morinokura. This sake is sold at a supermarket near my usual business hotel. There is nothing special about it. There's nothing special about it, but you'll know it when you drink it. One sip and you will understand the excellence of this humble and unassuming sake. It's June and everyone is drinking summer sake, but there's still plenty of time for heated sake. but heated sake is still delicious these days.

The firefly squid is almost finished. So, I pulled out my favorite sake. Atago no Matsu Honjozo This is a really nice sake with a beautiful, unadorned mouthfeel and a great balance of umami. Not too light, not too heavy, and not too tiring to drink, this sake is just right for everyday drinking. Junmai Ginjo and Daiginjo are also delicious, but this deliciousness and drinkability can only be achieved with Honjozo. This sake is good to drink at room temperature with a cup of hot water, but it is also very drinkable chilled. The combination with firefly squid with vinegared miso is perfect!

This is a heavyweight sake with a Tamagawa feel that looks great warmed up. A really good heated sake can be served with sashimi or without any snacks. According to the brewery, this sake is still in the easy-drinking category, and there are other brands that are more aggressive and punchy.

There are three sakes that I have been drinking that I must buy when I see them. Shoyuki's hiyaoroshi, Tsukibotan's barrel sake, and Matsu-no-Masa's nama-hashiori raw sake. The umami is amazing. It is outstanding, but easy to drink and can be served with meat, fish, vegetables, or anything else. However, the sake is the star of the show, not the food. Anyway, it is delicious. Although the sake is -5 on the sake scale, this is a food sake. Sake by itself is good, but this is a too good sake to be enjoyed with a meal.

Sasakama, kinpira, hijiki, Just go to a convenience store, it's a convenient time. Yamahai Junmai, clean taste and fresh aroma. To be honest, I am not a fan of fruity sake, but sake that tastes good and smells fresh and azure is delicious just by putting it in your mouth. I bought this sake at a GW event, but it is not easy to find in Osaka. When I drank it in the past, it was a junmai genmai sake, a sake that exploded with the flavor of rice, but I didn't know there was also a sake that could be drunk refreshingly. I am glad to hear that. It is a brand I would like to pursue.

Local sake for local food. Aji sashimi and a glass of sake. Spring has come, the weather is warming up, and the horse mackerels are starting to get fat. A famous Shizuoka sake, Kikusen at room temperature. The taste of aji, soy sauce, and sake. Slowly, slowly, slowly. Luxury. It would have been great with some sudachi (Japanese citrus fruit).

What is good about Nagano sake? Even though the sake is easy to drink The sake is easy to drink, but it is also very assertive and assertive. This 70% polished sake from Matsumoto, Alpine Masamune, is wonderful warmed up, heavy-boned, spicy, and full of eels. The label on this sake says that it is a very dry junmai sake, and as such, it is quite dry with a hardness. It is said that no sake goes well with eel, but I personally think that fatty eel and dry sake go well together. The sauce is very little and extravagant, And above all, sake is the most luxurious thing to drink from noon!
Japanese>English
ヒラッチョ
I also like Nagano sake, The clarity and the taste ride is not like the neighboring prefecture of Niigata Prefecture. A bowl of eel from noon is a luxury. I also like to enjoy the taste of the eel itself with less sauce. 👍

Hello, Mr. Hiraccio. I see that Nagano and Niigata are neighboring prefectures. I looked at the map again, and both prefectures are large from north to south. It would be fun to compare the different regions of the prefectures. There are many good breweries in both Niigata and Nagano.

I went all the way to Namba, where Shirakiku is sold, to buy some bonito that looked good at a nearby fish shop. Shizuoka and Miyagi are good, but I prefer Kochi sake for the bonito. This sake is called "Zanshin," but it's not really dry. It is rather soft and gentle. It is even more so when heated. Kochi sake is often thought of as a rugged, dry sake, but for me personally, it is more than dry; it is easy to drink, with a pleasant thirst-quenching taste and a pronounced flavor that is easy to savor. Shirakiku in particular is easy to drink. You can drink it forever.

This is the taste of sake from long ago. It is nostalgic. Sweet, sweet and a little sticky. Reminds me of when I was young and broke. A warming drink. The horse mackerel is also delicious. The atmosphere of Takaraiya changes at once when you go up to the special junmai class. It has a firm flavor and crispness that is typical of Oita. However, I feel most at home with honjozo.

The taste is very much like Urakasumi's. However, it is not too classic and can be enjoyed with burdock mayonnaise or Chinese broccoli. This is Urakasumi's strength, after all. I am a fan of heated sake, but this sake was best at room temperature rather than heated. The bitterness is pleasant.

Wataya's local sake. Surprisingly light and dry, or even mute, when drunk cold. It has a good umami taste when drunk at room temperature or heated. What makes it so good? Just when you think the gentle flavor of the rice has disappeared, you feel the square umami of the alcohol. It is different from Wataya's soft sake, but it is also a shoku-naka-shu. You can drink it forever and drink too much. I was able to drink too much and I was manacled with room to spare.

Elegant lunchtime drinking. Two of Miyagi's best sake are Urakasumi and Ichinokura. To be honest, I preferred Urakasumi. When I visited Naruko Onsen the other day, I drank a lot at bars and sushi restaurants in Sendai on my way to and from Naruko Onsen. The one that came out was Ichinokura, a raw honjozo sake that I had bought as a souvenir. It was a Sandesi, but it was not freshly stored, but freshly brewed. It was wonderful. The freshness and sake-like character of the sake and the strength and umami of the sake are noticeable even though it is a nama-zake, and it is delicious. It is a sake that does not lose to the fat of the eel. After all, new sake is delicious. It would be nice to buy a bottle of this sake and spend New Year's.

Oita's popular sake, Hanashimi. Furusato tax return gift. Hanasoumi" means a bright smile like a blooming flower. I think this kind of sake is really wonderful. The freshness you feel just by putting it in your mouth. The light bitterness and umami that can be felt at the same time. It sinks in a teacup at room temperature. The taste is pure and unadorned, just like the haze on the label. According to Sake-no-Wawa, they also offer a draft sake in winter. I want to get it somehow.

Hatsukame, Fujieda's sake. The ginjo aroma is pleasant without being overly fragrant. This is the power of the ginjo kingdom. Not only does it not interfere with the meal, but stir-fried oysters with vegetables and two pieces of sashimi from the supermarket make this ginjo-shu delicious. This is also a sake for a meal, as the snacks make the sake delicious. I love Shizuoka sake such as Shoyuki, Isobojama, Kaiun, Kikusen, and Shidaisen. Hatsukame is a good choice if you want to drink Shizuoka Ginjo-style Ginjo-style sake. By the way, Hatsukame is also great when heated. Hatsukame is also great when heated. One of his favorite foods is satsuma-age. Satsuma-age and sake put me in a good mood at once. The sake I bought on my business trip to Kyushu is almost gone. Wakanami is a popular sake. It has a light aroma and acidity. A light sake that young people can easily drink. It is easy to drink even when heated, but it also warms up well and tastes great warmed up or cooled down. A modern sake that I would like to support following Hakurakusei and Haneya.

Heating up ginjo-shu and nama-shu is not recommended. But I warm up my 55% Yamada polished sake because it's delicious. It's delicious. Kaiun is great. I'm not complaining until after you drink it. Is Shizuoka sake light or heavy? It is sweet, spicy, bitter, acidic and delicious. The aroma is also good. In my opinion, one of the conditions for a great sake is that it can be served at room temperature or warmed up. I drank it at an izakaya, but it was a little short. I'll drink some more with a can of mackerel.
