Well, let's have another drink. Since we ordered sashimi, let's go for a dry sake. This one is crisp and watery, with a hint of umami in the dry taste. This is the kind of sake that tastes sweet when you lick salt off of it. It is delicious. I opened it and left.
As shown on the reverse side, it appears to be an aged Junmai Daiginjo sake. It combines the softness of a Junmai Daiginjo with the unique rice flavor of an aged sake. It is not too sweet and does not have the strong peculiarities of matured sake, making it a Junmai Daiginjo that is easy to pair with food.

The bitter aftertaste is short, accompanied by moderate sweetness and umami.
The mouthfeel is light, but the flavor is firm.
