Dry Junmai sake. Made from 100% Gohyakumangoku rice. Polishing ratio 80%, alcohol content 15.5. The sake has a refreshing and clear taste with no clutter, which is hard to believe for a sake made with 80% polished rice. It also has a sharpness with a hint of acidity. Although it is dry, I did not find it difficult to drink. The strength of the acidity in the dryness is well balanced. I was not expecting to find Eikoufuji on display at the supermarket, so I bought it immediately, and I am glad I did. The label reads, "Eikoufuji's limited fire-aged "Junmai-shu Itsu Senpu Blade! It is a dry junmai-shu with a smooth flavor and a clean crispness that you would not expect from 80% polished rice, and can be enjoyed at a wide range of temperatures! It is a dry junmai sake that can be enjoyed at a wide range of temperatures.
