100% Aiyama rice used. Polishing ratio 75%. The alcohol content is 17%. When the cork is opened, there is a popping sound. There is no sense of fizz. When you put it in your mouth, it comes in quickly, and then the sweetness and umami taste spreads in your mouth. There is no cloying taste. I thought I would enjoy it little by little, but I couldn't resist. Thinking back, the first time I tried Shichida was probably the first time I tried it here. It has been since then, but it is still delicious. I have many fond memories of Shichida. The label says, "Aiyama is a sake rice that can express the flavor of rice comparable to Yamadanishiki and Omachi, and we dared not to polish it too much to bring out the full potential of the rice. It is a raw junmai sake that is not filtered at all. You can really taste the flavor of Aizan.
