First young horse. As the name suggests, the taste is like a lively horse, as shown in the endorsement. It's made without pressurization, which means that it takes time for the drops to accumulate under their own weight, which generally results in a clearer taste. In terms of flavor, Kaze no Mori 807 has a calm, not swoopy feel.

When I drank it at the store, it went very well with Japanese food. I went to a liquor store in my neighborhood for a while, and they happened to have it, so I bought it right away. The sweetness is moderate, not classic or modern... Anyway, it has the delicious aroma of rice, and the label says "I'm eating sake (rice)". It has a lot of flavor, but it's also relatively refreshing. It has a good balance and goes well with meals. It is more mountainous than oceanic, and is good with simmered taro.

It buys it in Mr. Kodama of Otsuka. It was the first time to buy Honkin at Kodama. It is 18% alcohol by volume, unfiltered and unpasteurized, and it is a new sake. It's spicy, but it's also gorgeous, and it's got a strong body. It's interesting that it doesn't have an old-fashioned smell, although it does have the alcoholic feel that comes from the alcohol content and honjozo, but 18% is a bit tiring.

It is Tenmyo that I do not see around me. I found it at Mejiro Tanaka shop and bought it. It is neither light nor heavy. The taste is classic. There are not many ups and downs in the taste, and it is a gentle downward curve if it is expressed on the horizontal axis. It's like it's going down slowly and deeply. I wonder what it is.

Along with Kaze no Mori and Sawaya Matsumoto, we were drinking Kamenoumi. This is the first time to drink Kame-no-Umi, which is said to be becoming popular. The most notable feature is the gorgeous pineapple aroma. The strength of the attack reminded me of Kawanakajima Genmai, also from Nagano Prefecture. The sweetness is also crisp and pleasant. I like it better after a while than right after opening the bottle. It has a great impact and will be popular.

This is another Sawaya Matsumoto private brand product that I learned about on YouTube from Sumiyoshi Shuhan, a local sake shop in Kyushu. The specs above this were actually introduced, but due to budget constraints, I settled on this one (it still cost about 2,500 yen before tax...). While it has a taste of sake, the overall feeling is its lack of spiciness. It's not sweet or spicy, and it's easily absorbed. I think it's for experts, but I feel like I can't fully appreciate it now... It's like an ink drawing of Musashi Miyamoto. Well, sake is very deep.

There is a small local sake shop in my neighborhood, and there are always boxes of Kaze no Mori piled up outside the shop. Kaze no Mori has fallen out of fashion, or rather, I've been somewhat reluctant to try it, but the other day I saw this sake featured on the YouTube channel of the Sake Cost Bar, so I gave it a try. It's a modern, light sake that's easy to drink with a sense of lightness. I've actually been resistant to the expression that sake tastes banana-like, but I finally felt that it does have a banana-like taste... and for some reason I felt defeated. Easy first cup! I liked it anyway because it was easy to drink. It's also inexpensive (^_^)

Kamokin's 13 degrees Special Junmai Raw. It has more color than usual, but it has a stable consistency. I like such Kamokin though it is sober. It seems to go well with delicate dishes, but we can't make such delicate dishes by ourselves.

Immediately after opening the bottle, it is slightly fizzy and has a gorgeous impression. If you leave it for a few days, it becomes more bitter and sweet. I like this bitterness (^-^). I didn't like it so much at first, but by the time I finished drinking it, I liked it. In the end, I drank it by itself, but it is good for a sake with food because it is sharp. I didn't know there was such a good sake in Ueda. Next time I go to the countryside, I'd like to stop off at a sake brewery. I also recommend Bessho Onsen, which is only 30 minutes away from Ueda by train.

It's a great time to drink while preparing dinner for the family and making snacks for myself, but I wasn't drinking too much, but my knives kept going crazy and injuring my fingers. As a solution, I thought it might be less crazy if I went low alcohol, so I bought two bottles I've been eyeing for a while, one of which is Beau Michel. The bottle is cool. There is no bad wine in a cool bottle. It's not expensive. It's not expensive, but it comes in a box, so it makes a great gift. It tastes like a white wine with no sourness, elegant and refreshing.

Purchased at Yokouchi Sake Shop. One character "figure" in gold on a black ground. It is too cool to buy. It has a heavy sweet flavor and a unique aroma. Compared to the Omachi Nakatori we drank last year, the aroma and sharpness are a little more refined. However, it still packs a punch now. The attribute of brewing Gohyakumangoku in Tochigi is the same as Ona. The rice, water and yeast may be different in detail, but in the big picture, it is a local Tochigi sake. I can't lump them all together, including Senkou, which is more concerned with terroir. It's a shame that Tochigi's sake is so good, even though it's at the bottom of the list for attractiveness.

Purchased at Morita Shoten. The other day, I had a bottle of Ona Junmai-shu at a Japanese restaurant after a long time, and I reconfirmed that it is a good sake for eating. I was so impressed by it that I bought Nigori-shu. It has a little more oriental flavor, a little less sweetness, a little more umami, a little less acidity, and is easy to drink. It is easy to drink without any peculiarity. The special feature is the sharpness, the aftertaste disappears into the back of the bottle, but the way it disappears is different from Kido. It can be drunk alone, but it is definitely better to have it with other drinks.

My first Chievijin and a backdoor Chievijin. The bottle was cool, so... backdoor entry ( ´´triumphant´´). It's sweet and delicious, voluptuous, rich, crisp, and sharp with a touch of bitterness. Feels like I'm drinking some expensive sake!

I've been drinking mostly warmed sake since it's been cold, but last year I had a heated sake called Tanzawa at a lodge in Tanzawa, a mountain in Kanagawa Prefecture, and it brought back memories of how good it was. The Reimine, even at 60 degrees Celsius, had a core of flavor that flowed smoothly, and I heard that it could go up to 70 degrees Celsius or more, which makes me want to buy a new thermometer... Shuhou is softer and less peculiar. After drinking Reimine, I feel like I'm missing out, but it has a different purpose and can be enjoyed in all temperature ranges. It's recommended by many liquor stores as a heated sake, and that's saying something.

It's winter and I want to drink warm sake. I wanted to drink something hot, so I tried Kamikame for the first time, which is said to be the best heated sake. I also found a 300ml bottle. I heated it up with a cheap aluminum heating pad...to about 60 degrees. The aroma of the sake stands out, while the thick rice flavor spreads and is hardly unpleasant. I realized that this is what good heated sake is all about. I'm sure it would be great to eat it at a cold stall with oden.

I bought a bottle of this because it was memorable when I had it in the store last year. The category is classic light or between modern and classic. The characteristics are sweetness and cleanliness, and I think it has conflicting characteristics like two rabbits.

I had wanted to drink this Akaban for a long time. I couldn't get my hands on it because it was a bit expensive, but at the end of the year, this product came out at 2000 yen without tax. Usually, Akaban is a medium brew, but this is a blend of Araduki and Tameshi, which is not a medium brew. It's sweet, juicy, crisp, and easy to drink. It's similar to the Tenmei Ichi-go I drank the other day, but I felt a little more complexity from the blame. I'm looking forward to drinking it again.

In order to send New Year's sake to relatives who have been good to me, I stared at the refrigerator at the Haruyama Sake Shop. I decided to send two bottles, one of which was a 39-year-old Kankiku, which has a straightforward and modern meaning of gratitude. The other one is a different type, and I lost my way and decided to use this black cow for the Chinese zodiac. It's more of a classic type, BY30, matured Omachi, so I expected it to go well with nabemono. I had never tasted Kurogyu before, so I bought a bottle and tasted it myself. Thanks to the aging process, the taste is not violent and the aroma is acceptable. The Omachi has a round taste with a strong presence and a good balance of power. I'm thinking of spending the New Year's Eve with this and Motsu-ni. I hope we can drink good sake again in the New Year. Please be careful not to drink too much, and we wish you good health.
