Rice polishing ratio/60 Sake degree/+3 Acidity/1.4 Alcohol content/15.5 I happened to order this bottle at the inn where I stayed. I drank it after biting into a large rockfish that came out of the bottle. I felt no heaviness in the mouthfeel, and when I drank it, the sweetness from the rice was so strong that it dominated my mouth with sweetness, making me happy. I think this is the sweetest sake I have ever had. The aftertaste is not so dry contrary to the sake level, and it is very easy to drink, allowing you to fully enjoy the sweetness of the rice.

Rice polishing ratio 57 Alcohol content 15%. Ingredient rice: Yumesansui Unlike the sake we usually drink, we suddenly feel the weight of the sake on the palate. However, the sweetness that spreads from there is very pleasant. Then comes the pleasantly tangy acidity in the aftertaste. It was a great drink tonight, too. But once you drink it, any sake is good, isn't it? Also, father, don't act like you're sober after drinking half of the remaining 4 gos of Oshinshu and half of Nanaken before I left.

The aroma is gentler and more coherent than usual. It has a smooth mouthfeel that is typical of Toyobai, with a hint of pear-like sweetness. Overall, it is a cohesive, refreshing and mellow cup with a gentle aroma, taste, mouthfeel, and aftertaste.

Rice used: Toyobai rice Rice polishing ratio: 55 Sake meter: +1.0 to +2.0 Alcohol percentage: 16 I hadn't had Toyobai for a while, so I ordered it by mail order. What surprised me the most was the smoothness of the mouthfeel, which was incomparably smoother than other sake breweries without feeling any discomfort or roughness. While I was being surprised by this, a faint sweetness that reminded me of apples came next, which made me feel like I was dreaming. As I was enjoying this, a pleasant sourness came later, as if to announce the end of the dream. This time, we decided to have only apples as a snack, which was a bit challenging, but Toyobai's subtle sweetness and sourness matched the apples very well and it was delicious. After all, Toyobai is the only way to win.

Koji rice: Aomori Prefecture rice Kake rice: Aomori Prefecture rice Rice polishing ratio 55/60 Alcohol 15 Aomori's local sake happened to be available at the supermarket, so we bought it immediately. The clarity and smoothness of the water goes without saying, and the initial gentle umami and sweetness are pleasant. The aftertaste of Hachisen's unique tangy sourness is very pleasant, and goes well with salted squid. I wrote about what I thought, but I thought it was still difficult to reach a flavor and taste like 00. However, Hachisen's special junmai goes well with any kind of sake.

I went on a trip to Nagano but had no time to buy souvenirs, so in tears I bought some at a supermarket near my house. Masumi, which exudes a mellow aroma, has a sweetness that reminds one of fruits at first, and when it rolls on the tongue, a moderate acidity and a slightly strong dryness appear later. This is then washed down by Suwa's crystal clear water, making it easy to drink despite its dryness. The treasures of Suwa-taisha Shrine gave me happiness.

With tuna mitsuke and simmered sea bream. Aside from the umami of the rice, the clarity of the water and the refreshing aftertaste were superb. It is a brand that claims to be a "food sake," but it certainly does not interfere with the food, but rather enhances it. (It is a very good wine, but it is not so easy to drink. Oh, the rice polishing ratio is 55%. Is this the reason why the aftertaste is so nice?
