I wanted to try some sake from Fukui and found a brand that is often introduced by a certain izakaya on Instagram. I wanted to try it immediately! Here we go!
The aroma is very mild, but the sweetness like persimmon and the fresh aroma like pear are pleasant. The very smooth and sweet brewing water is a pleasant marriage of bitterness and persimmon sweetness. A slight acidity also merges and fizzles out as it does. I think that only hiyaoroshi sake can have such a gentle sharpness and lingering flavor. I like this sake!
