It has been a long time since I have been to Kaze no Mori. We were served a test brew, which is usually brewed with ultra-hard water but this time with soft water.
When poured into a glass, it was effervescent and fresh. The sweetness is followed by a bitter and astringent taste that is quite delicious. The 90% low-polished rice is also rich and complex.
