When the bottle is opened, the acidity is soft. It has a gentle sweet umami taste and a slight umami astringency, and it disappears nicely.
At first I thought the acidity was weak, but as the temperature rises, the beautiful acidity takes effect, and the aroma of the wooden vat doubles the flavor!
It is still a beautiful and clear sake. ☺️
