Takasago純米大吟醸 生

We will be drinking Takasago by Kiyamasa Shuzo, a well-known brewer of Jikin!
On the first day of opening the bottle, there is almost no standing aroma, and the sourness and slight bitterness typical of the Nama-moto style of sake brewing are present, followed by a fusion with the concentrated umami. As the temperature rises, sweetness is added to the acidity, making it even more delicious. The last taste is tangy, spicy and bitter, which is quite to my liking 😋.
On the second day, the acidity settles down and the sweetness opens up to become even more delicious!
It is a very rare and beautiful sake, so I will enjoy it slowly 😊.
