The year-round version of Collage Junmai Ginjo
The aroma of young melon is almost nonexistent, but when you take a sip, the umami slowly rushes in from the spicy bitterness. The last part is short, bitter, and crisp.
Since it has only been hi-ire once, it still tastes fresh and clean. Compared to the seasonal sake, it has a calm and gentle flavor, making it a good sake for a mealtime drink.
