We finished tonight's dinner with a "Kamesen". I know it's sweet, but I thought it might be a good choice for an aperitif or after-dinner drink. As I expected, the after-party was more exciting than drinking, so we were grateful to have friends with whom we could talk frankly.

In my opinion, this was the best dish of the night. It was so delicious. It was refreshing without being like a Japanese wine. It's just like white wine. It's so good. This might be one of my top 3 sakes of all time. I can drink it many times over. Aiyama 39%. Five million gems 37%. Yamadanishiki 23%.

Rice polishing ratio 60%. 15% alcohol by volume. Sake meter value +3 Acidity 1.4 If you watch a YouTube clip of Japanese sake, you will see that most of the sake sold in supermarkets is not suitable for beginners and should not be consumed. That's true, but in Niigata, in particular, you can enjoy a variety of Niigata's sake in different seasons. When I went out to buy dinner, I saw the word "Hiyaoroshi" on the table in front of me. I was going to pass it off as I don't drink on weekdays, but I couldn't resist buying it. The label made me buy it. Sake from Niigata! It's like.

15% alcohol by volume. Rice polishing rate 40%. It's a rare "Daiginjo". I'd really like to drink it anytime, but Daiginjo is expensive. It's a given that it's expensive and delicious. If possible, I'd like to find something tasty by comparing only sake that costs around 1,500 yen for a #4 bottle. That said, there are times when I can drink a rare, expensive sake (this time, my wife gave me the OK to buy it). I was going to drink only one glass a day, but as a result I've been drinking three glasses of sake (laughs). It was hard for me to stop drinking it. It's refreshing and fruity, but it goes well with food. Today, I was able to drink it with "Squid with Salt".

Iide mountain water is brewed. Rice polishing ratio 65%. 15% alcohol by volume. For the first time, the sake of Kitakata. I am beginning to wonder if the rumor is true. In other words, "there is no failure in the sake of Fukushima". We drank it with no prior information, but it is delicious. It has the sweetness that only rice can provide. But it's still sharp and crisp. It doesn't get in the way of the food. It's very good. Recommendation.

A hard-to-find sake, "Jikon". I wondered what it would taste like, but it's so good! It's a different story from yesterday's "Shinsei". It feels like an authentic development of Japanese sake. The taste is close to that of "Jyushiro" and "Keisaku". In fact, the taste is somewhere in between those two. It is delicious on its own as well as a great sipper. It's really delicious. I'm so happy.

New Government! I bought it and drank it٩(๑´3๑). I knew it was totally different from other sake. It doesn't have a Japanese flavor. This is good. It is really delicious. So far, Shinsei is the best by far!

Information is gathered in the output. I've been gathering more and more information on Japanese sake by writing it down. As a result, I received a valuable sake from Niigata today from a friend of mine٩(๑´3๑). I'll try it right away. Mmmm, it is delicious. Basically, I thought the light and dry taste of Niigata's sake was a bit outdated, but it's delicious. We ate it with the taste of autumn, saury. Mmm, awesome. Alcohol Content: 19.5%. Rice polishing ratio: 65%.

When I learned that its popularity was skyrocketing, I bought it along with "Kaze no Mori". It's a coincidence, but I felt that the sweetness of Kaze no Mori has been extracted from this sake. It's a sour, or rather sour, sake. To be honest, I think it's not easy to drink this sake all by itself, but if you have a snack, you can drink it forever. I guess this is what is called a "food poisoning" sake. Sake is really very profound. Alcohol content: 16%. Rice polishing ratio: Koji rice 60%, Kake rice 70%

I drank the rumored "Kaze no Mori (Nara Prefecture)", which ranked 2nd in the nation's "Sake no Wa" in September 2020. It's a completely different taste from the traditional sake, which is why it was ranked second in the nation. When I opened it up, even though it wasn't a sparkling sake, it had a carbonated feel to it, and although it was fruity, it wasn't too sweet, it was crisp and refreshing. It's good. It's 17% alcohol by volume. My wife says it makes me drunk easily. I see. But it's so smooth that you can drink it all you want. It's a dangerous drink, isn't it? Also, I don't know if writing this will make it better or worse, but the aroma is something I've never smelled before with sake. If I were to compare it to the smell of chemicals, it smells like chemicals. It's not as nasal as thinner and not as unknowingly invasive as cemedine.... Hmmm, it's hard to describe. I'd like to get drunk with sake while discussing it. I'm looking for a sake friend group. Anyway, this was too good a sake. I think I'll go to buy it when I have a chance, because it's always available in the Echigoya.

I hadn't planned to drink it, but I was absentmindedly looking at the liquor section of my usual supermarket and before I knew it, I had bought it (laughs). It was cheap. The package, which said "A new kind of sake with a dense sweetness reminiscent of white peaches, with a crisp acidity and a pleasant aftertaste," must have inspired me to buy it. In fact, it tasted exactly as it did, and I was reminded of how sweet sake is, even after all this time. When I was young and didn't drink much alcohol, the only image I had was bitter and astringent. However, I've come to realize that I'm someone who likes to drink while I eat. My journey to find a sake to go with it will continue... Rice polishing ratio: 65%. 12% alcohol by volume.

I got a rumored Kido. It has been a while since I had a Daiginjo. Maybe that's why it is refreshing to drink. The taste is mild. It's rather sweet. It's not as sweet as the Kanyoukyou. It feels mellow. You can feel the sweetness. It is difficult to pair it with food because it is independent of alcohol. This time it was cold tofu, cucumber and wakame seaweed with vinegar. And sushi. And mozzarella cheese. The best match was probably the cold tofu. It doesn't interfere with alcohol. At my age, I've come to realize how delicious cold tofu is. Rice polishing ratio 50% (100% Yamada Nishiki) 15% alcohol by volume.

I bought the rumored meat-focused sake. It has a good punch to match with the meat. It's a bit too alcoholic to drink on its own, but it's a great sake to drink with meat. As expected. Alcohol content: 18.5 degrees Rice polishing ratio: 60%.

I was thrilled to find a bottle of Niida Honke's sake at a local sake retailer. I was both curious and apprehensive about what it would taste like, but... it was delicious! It has a crazy wine feel to it. It's not too sweet, so it's refreshing and goes well with food. But it doesn't have the "old-fashioned sake" feel that I'm looking for, so it's perfectly delicious. If I find this sake in the future, I'll buy it and drink it as much as possible. Alcohol Content 16.5 Rice polishing ratio: 80%.

This is Japanese sake? I was attracted to the tagline, "I'm not a fan of this drink. Alcohol content 8 degrees. Rice polishing ratio 65%. Sake meter value: -84 Acidity: 6 It's not a great sake, but I don't know if I'll continue to enjoy it. It doesn't have the feel of Japanese sake, which is good, but I'm not sure if it would go well with food. I'd like to think about it. That said, if you have a bad impression of Japanese sake, this is a drink you should try. I highly recommend you try it at least once.

This is the highest grade of sake for young people (that is, they don't like old-fashioned sake). We found it at the Echigoya store we visited yesterday, so we bought it along with a bottle of Sentoya. Yes, it doesn't feel like sake. It had a sweet and refreshing taste to it. For me, it was refreshing compared to the Sentoori I drank the day before (although the Sentoori was delicious). But my wife still finds the golden crystal to be better. Indeed, the taste is not extremely different. If that's the case, should we, who live in Fukushima, recommend "golden crystal"? Well, I'll leave it at that, fruity and sipping! Recommended!

I searched hard to find my favorite local liquor store. I found a liquor store in Fukushima City that carries a variety of brands from all over the country, and I opened one of their two bottles. Delicious. I'm so happy. My wife said she liked the taste of the Kinseijojojo (Fukushima City) we drank two days ago, and she said it was a bit more... in comparison. Come to think of it, the taste is similar to that of Kinsei. It doesn't taste like what is commonly known as "sake". In that sense, I would recommend it to people who originally avoided sake. The difference is that Kinseijojiu has a deeper taste. The difference is that Kinnakusui has a deeper taste.

Fukushima City's only sake brewery, rumored to be delicious. Yes, it was delicious. My criteria for judging a sake is that it doesn't smell like old-fashioned Japanese sake. In that sense, it's a new taste. It's almost like a wine. My wife said it was a taste that women liked, but I think it was a bit heavy on the alcohol. If it was a little lighter, it would appeal to everyone. But in my neighborhood, it's by far the best tasting drink I've ever tasted. If I find one in the future, I'll be happy to buy it.
