A gift from Hirupeko. As she posted, she participated in the sake rice production ✨I was wondering what it tasted like. I was curious to know what it tasted like, and I never expected to receive it 😊. We would like to express our gratitude to Hirupeko and our respect for her time, effort, and love for sake brewing. First, let it cool. At first, it smells like a blend of rice malt and koshinko (rice powder). In the mouth, there is plenty of rice flavor supported by a thick, soft, and somewhat sharp acidity. The finish is big and relaxed with the acidity and a bit of bitterness that is there from the beginning. Delicious 🍶. Next, warmed sake. At about 35 degrees, a slight sweet aroma emerges. Taste once here. The acidity is quite forward. I thought it would be more balanced if it were warmed up a little more, so I warmed it up to over 40 degrees Celsius, and the sweet aroma of the rice gently expanded. Here it is! I pull it out of the hot water bath and enjoy it. The gentle and elegant cotton candy-like sweetness of the rice is gently and softly supported by the acidity that is a characteristic of this sake. It's a relaxing taste that will take the tension off your shoulders. This is the best 🍶. Personally, I think it tastes much better warmed up ✨. Probably the one I had at the end of last month or so. I only took notes. It is modest at the entrance, but has a crisp acidity and a gentle rice aroma like Kamishinko at the back. In the mouth, there is just the right amount of umami on the sharp acidity, and the sweetness of the ori slightly expands while finishing with sharp acidity and a bit of bitterness. This is delicious. Overall, it has a dry mouthfeel with a so-called "dry" taste, but it has a good umami presence in the middle part of the mouthfeel and a polite and clear mouthfeel even though it is orikara. When I drink a sake like this, which seems delicate at first sip but in fact has a solid body, I feel that the core of the traditional sake is "politeness". I was thinking that this kind of exquisite taste is only alive when it is drunk raw. Very delicious 🍶.

The other day, we had a visitor from overseas who said, "I love SAKE! So we had a dinner at a small restaurant that mainly served Japanese sake. I think I drank more than 10 different sake brands, but I couldn't even remember what I drank because I couldn't take notes or photos on the spot 😆 but this Yonezuru Nama Sake left a lasting impression on me, both in terms of its production and taste, and I was so excited to see it that I bought it 🦢✨✨ and kept it in my fridge. The entrance smells like freshly milled rice powder, with a thick melon-like pulpy aroma riding on top of it. On the palate, a thick, soft acidity is topped with a full flavor of rice and a slight, gentle sweetness that rides on an endlessly clear, fresh mouthfeel. The finish is well-balanced with thick, soft acidity and a slight bitterness. It is the kind of sake that sticks in your memory until a later date, even when you are drunk, which is what I like about it. Next, I tried it warmed. The aroma of fresh rice powder at the entrance remains the same, but the acidity tightens it up a bit, in a good way. In the mouth, the thick pulpiness you feel at the entrance takes the role of acidity and brings the sweetness of the rice in the middle of this sake. This is truly a peach 🍑! Interesting! I've had a few "white wine-like sake" but this may be my first peach. I've been a nectar juice lover since childhood and this is a good drink for me ✨✨. Echigo Tsurukame has always been available in a classic labeled aluminum can one-cup (with the most wonderful design ✨), and the taste is quite a distance from that classic mellow, delicious flavor. When I ordered the "Manager's Secret Sake," I was offered a choice between Houou Mita Black Phenix and this one. After some hesitation, I chose the beautiful pink spring sake, thinking that I had already had the former several times. At the entrance, the aroma was full of sweet aroma of rice malt, mixed with fresh creamy thick acidity. In the mouth, the rich amazake-like rice sweetness is mixed with fresh crisp acidity and slight carbonation, and this somehow strangely reminds me of sweet and sour "strawberry" taste. This is amazing. Why, strawberry? After seeing the pink label and the color of the sake, I wonder if I'm drinking it out of an image. Apart from the "strawberry" feeling of "strawberry," the perfect balance at the finish, which is unimaginable from the richness of the entrance -> middle part of the bottle, is actually good with food. It was also good with lotus root tempura. ✨✨As one would expect from a sake brewery aiming for "the ultimate food sake," I thought.

I've been curious about this one for a long time, and this is the first time I'm drinking it. The name "No.6 yeast yeast yeast" sounds just like Shinmasa. I have been curious about this brand for a long time. Today, I came to this bar for this. The menu was written in hiragana, "Fusa no Kankiku", which made me even more nervous because it was half messed up 🤣. At the entrance, there is a sweet aroma of rice malt. Comparison of three types of junmai ginjos from the south. The last one was Dewa Tsannin's raw sake. From the entrance, it has a fresh aroma of freshly polished rice powder and a sense of fullness with a hint of sweetness, which is typical of nama-zake. In the mouth, the sweetness of the rice mixed with the clean mouthfeel and acidity will delight your palate. This is honestly delicious🍶. Comparing the three, while there is of course a difference in taste due to the difference in sake rice, I was reminded once again how delicious nama-shu is as a sake made from sake. The plump flavor of the fresh rice and the gentle sweetness, just like the taste of white rice, is what I like the most 🌾. I had this at Yamanaka Sake store in Osaka station about a month ago. We started with Matsuyama Mitsui. It is very modest at the entrance. My favorite San-in sake, Tottori sake. And I love the mushroom design on the label so much that I bought it at Ginshizuku in Sannomiya, Kobe 🍄. The aroma reminds me of lychee and muscat at the entrance. At the back of the aroma, it is not just a fruity aroma, but a dark and at the same time clear aroma (this is the first time I have ever smelled it.
