Comparison of three Junmai Ginjos from the south. Next up was Omachi. We were lucky to open an unopened bottle ✨✨. From the first sip, the aroma has a candy-like acidity that reminds me of the sweetness of rice. When you put it in your mouth, the surprisingly restrained umami spreads elegantly. The sharpness is also soft. This is delicious 🍶. If I had waited for the temperature to rise a little more, the umami would have spread more widely! I realized after I finished it 😆😆. It is very important to know what temperature to drink sake at, don't be in a hurry to finish a good sake 😆😆.
