New sake has been arriving one after another, and today we have a freshly pressed raw sake from Shichihon-yari.
I had an image of it being heavy and heavy, but it has a fresh and light touch that makes it easy to drink. It is made from a Shiga sake rice called tamaei and has a refreshing acidity. I would like to wait a little longer to enjoy the changes in flavor.
